With the start of the new year, I see everyone around me going paleo, doing intense rounds of the Whole30, trying the KETO diet, cutting out sugar/carbs/dairy/night shades (?), or sometimes ALL of the above. I am not a fan of restriction of ANY kind and cutting out whole foods groups is definitely not the way to reach your health and wellness goals.
But for those of you wanting to “get healthier” or make some positive changes in the new year, I suggest ADDING things to life or your daily diet instead of always focusing on removing or what you “shouldn’t” be eating.

It’s as easy as that. Skip the fad diets and “flavor of the week” weight loss tips. Focus on changing one thing at a time in your diet and you’ll begin to see the positive changes in your body and mind.
My suggestion is always to start with getting more produce in your diet! Fresh produce is some of the healthiest, most nutrient dense food you can eat and when you eat more of it, chances are you’re going to eat less of the not so nutritious foods.
Today I am sharing some of my favorite QUICK and EASY plant powered (AKA veggie filled!) meals from around the web. These recipes are plant FILLED (some are fully vegan), packed with vegetables, and are perfect for getting a healthy meal on the table in a pinch.
Healthy eating doesn’t have to be hard, time-consuming, OR flavorless. And these recipes prove that!
Really short on time?
