I think it’s safe to say I’ve commandeered my mom’s Instant Pot. Ever since I bought her one for Christmas last year, I’ve gone over to my parent’s apartment at least once a week to whip up a fun meal or soup.
It’s just so easy to use and I love that the food tastes like it was slow cooked for HOURS even though it only takes minutes to cook. It’s the perfect kitchen tool for people who want to meal prep but feel like they don’t have the time. From meatloaf and chili and to banana bread and oatmeal…Instant Pots really can cook everything. Desserts, main dishes, breakfasts, sides, and my favorite, soups, all turn out amazing when pressure cooked. Plus, it makes for an easy method and clean up as well!

It requires no fancy settings, no sautéing, no quick releasing vs. manual releasing….or any of that nonsense! To be honest, even though I use the Instant Pot often, I keep things pretty simplistic.

Does anyone love split pea soup as much as I do? It’s so hearty, thick, and FULL of plant-based protein! Sure, the color isn’t great and it typically turns out looking like baby food once it’s done cooking, but the deliciousness factor makes it worth it. ?

Ingredients
- 2 cups dry green split peas
- 6 cups low sodium vegetable broth
- 1 can no salt added diced tomatoes
- 1 10oz bag of frozen Cascadian Farm Mirepoix Vegetable Blend
- 2 tsp Mrs. Dash Original No Salt Seasoning
Instructions
- Place all ingredients in the Instant Pot. Turn on Instant Pot, place lid on top, and press Manua. Set timer to 25 minutes. Let the Instant Pot cool down on its own. Serve the soup hot!
