With all the holiday cooking this time of year, getting motivated to make regular weeknight meals can be daunting. I know I don’t really feel like cooking normal meals after days and days of prepping for holiday parties and gatherings. But I know it’s always better to be prepared and have some healthy food prepped on hand for when those moments of not wanting to cook strike!
Lately I’ve been hopping on the meal prep bandwagon and I’m pretty impressed with all the delicious meals I’ve been able to throw together on the weekend for eating all week-long. Soups, roasted veggies and potatoes, casseroles, and especially SHEET PAN MEALS have been my go-tos.
I especially love sheet pan meals because you can make them an all-in-one, perfectly balanced meal with all the nutrients you need. Carbs, fats, and proteins all cooked together on one sheet pan and ready for serving when ever you need a quick ready-made meal!
Today I wanted to share a sheet pan meal that I’ve been making almost every week and that is FULL of seasonal foods you’ll LOVE.
This easy recipe includes has Brussels sprouts, Japanese sweet potatoes, red pears, pecans, and smoked sausage; so you can imagine how flavorful and filling it is. I LOVE smoked foods, especially smoked sausage. So, when I saw that Eckrich Smoked Sausage had a skinless turkey variety, I knew I had to pick up a few ropes to include in my meal prep.
The distinct smokey flavor of the sausage paired with the vegetable blend, toasted pecans, and tangy, sweet mustard-maple sauce makes for a perfect mix of tastes and textures.

Ingredients
- 2 13oz packages of Eckrich Turkey Skinless Smoked Sausage Rope, sliced into 1/2 inch pieces
- 1 ¾ lbs Japanese sweet potatoes, cut into bite-sized cubes
- 1 ¼ lbs brussels sprouts, halved or quartered
- 2 large red pears, cut into chunks
- 2 tsp dried parsley
- 2 tsp dried thyme
- 2 tsp dried rosemary
- Salt and pepper, to taste
- 1 shallot, finely chopped
- ¼ cup olive oil
- 2 tbsp maple syrup
- 1 tbsp Dijon mustard
- ¾ cup whole raw pecans
Instructions
- Preheat oven to 425 degrees F. Meanwhile, place potatoes, Brussels sprouts, and pears in a large mixing bowl. In a small bowl, whisk together shallot, herbs, mustard, oil, salt & pepper, and maple syrup. Pour dressing mixture over the vegetables and mix until evenly coated. Place veggies on a parchment lined baking sheet (you may need two if yours are small) and set a timer for 55 minutes. With 15 mins left on the timer, add sausage and pecans. Mix with the sausage and pecans in with tongs until they are evenly spread throughout the potato and veggie mixture.
- Once the last 15 minutes are up, remove the tray (or trays) from the oven and serve the sausage and veggie mixture warm.
Full of lean protein, complex carbs, and fresh produce (this meal gives you a serving of fruits AND vegetables!), this sheet pan meal is makes for an easy, healthy option to make and have on hand all week-long when you’re not really up for cooking a full meal from scratch.
So don’t make the holiday season anymore chaotic or stressful than it has to be! Make dinner (or lunch even!) one less thing you have to think about with this amazing one pan meal!
