Who’s gearing up for the BIG GAME next weekend?!
As I mentioned previously, I am not big into the game of football itself. But the Super Bowl? That’s a different story!
The parties. The commercials. The catching up with friends. The betting pools. The FOOD.
Even though I thought I had my Super Bowl snack menu pretty much set, I got a last-minute request from friend, who is doing Whole 30 this month and then staying paleo afterwards, to make something that he could actually eat.
Instead of telling him the myriad reasons why he shouldn’t be paleo (?), I decided to spare us both from a long back and forth conversation and give him a break…just this once.
Did I mention he’s also gluten-free? ?
Needless to say, I had my work cut out for me.
Amongst a sea of chips and pretzels, potato skins, chicken wing dip, jalapeno poppers, and taco dip, it can be hard for someone following a special diet to find something to snack on and actually ENJOY.
So I set out to make an appetizer that not only fit my friend’s needs, but also would be SO DELICIOUS that everyone else would want to have some too. ?
I lucked out in the inspiration department when I visited my local Whole Foods and saw that North Country Smokehouse Natural Kielbasa was on sale. NC Smokehouse is some of the only sausage I will buy because it’s flavored with organic, all natural spices and herbs, has no added hormones, no antibiotics, and no added fillers or dyes. Another plus? All of their meat products meet the Humane Farm Animal Care standards. So important!
So with some fresh sausage in tow (plus some of their chorizo which I used in a spicy black bean soup for my parents!), I decided on what kind of appetizer I would create for the Super Bowl party.
A Recipe Out of Necessity
I think most recipes are born out of needing to use things up or finding forgotten items in my kitchen. My Sausage, Pepper, and Pineapple Skewers were no different. ?
My roommate and I had split a whole pineapple recently, so I had a lot of that leftover, plus to red bell peppers that needed to be used up ASAP. I HATE food waste.
My 3 fresh ingredients (sausage, peppers, and pineapple) combined with a few flavorful pantry staples (Dijon mustard, maple syrup, sriracha, soy sauce) made for delicious take on classic meat & veggie kabobs. Except my version is “mini” of course, since “mini” things are always more fun and easy to eat at a party! ?
Sausage Pepper Pineapple Skewers
- Prep Time: 15 mins
- Cook Time: 30 mins
- Total Time: 45 mins
- Yield: 20 skewers 1x

- 1 12oz package of North Country Smokehouse Natural Polish Style Kielbasa, sliced into 1/2 inch coins
- 10oz fresh pineapple, cut into chunks
- 2 red bell peppers, cut into large chunks
- For marinade:
- 3 tbsp olive oil
- 2 tbsp Dijon mustard
- 2 tbsp maple syrup
- 1 tsp sriracha
- 1 tsp soy sauce
- salt and pepper, to taste
- 15–20 toothpicks or small kabob skewers, soaked overnight
- Preheat oven to 425 degrees. In a small mixing bowl, whisk together ingredients for marinade and set aside.
- Cut up sausage, pineapple, and peppers. Place all ingredients in a large mixing bowl and toss with marinade until everything is evenly coated. Using the toothpicks, skewer a piece of pineapple, pepper, and sausage. Place finished skewer on a parchment paper lined baking sheet. Continue with remaining ingredients until everything is used up.
- Bake for 30 minutes or until peppers are cooked through and sausage if slightly browned on the outside.
- Serve warm!
First off, these sausage skewers are SUPER easy to make. Secondly, this recipe will fill your kitchen with the most amazing smells. Fruity notes from the pineapple, smokey wafts from the sausage, and so much fresh, savory goodness. I don’t even eat red meat and even I was tempted to dive into the baking dish when it was done in the oven.
My taste testers gave the skewers a 10 out of 10 on the YUM scale and one of them (my dad) asked if I could remove the sausage, peppers, and pineapple from the skewers so he could put the mixture over a bowl of rice for a full meal. Not a bad idea actually! Sort of a two for one deal if you make this for an appetizer and have leftovers! But based on the reviews I’ve received, I don’t think you will. ?
