Smoked Sausage Sweet Potato Sheet Pan Meal with Rosemary and Thyme

Instructions

  1. Preheat oven to 425 degrees F.
  2. Place the sweet potatoes, Brussels sprouts, and pears into a large mixing bowl.
  3. Whisk together the shallot, herbs, olive oil, Dijon mustard, date syrup, salt, and pepper in a small bowl.
  4. Pour the dressing over the vegetables and toss until evenly coated.
  5. Spread onto a parchment-lined baking sheet and roast for 40 minutes.
  6. Add sausage and pecans, toss everything together, and roast for another 15 minutes.
  7. Serve warm.
