People either love them or they hate them. But for the ones that don’t like them, I think it’s more out of principle than taste preference. PSLs (as all basic white girls like to call them ?) have become a staple of fall since Starbucks’s first debuted them in 2003. In fact, they are so popular that Starbucks now releases them starting in late August. Will they soon be an all year round beverage? Only time will tell.
Whether you indulge your Pumpkin Spice Latte guilty pleasure or steer clear as to avoid being “too trendy”, you have to admit…pumpkin spice is where it’s at when it comes to seasonal flavors! It’s the perfect mix of spices and sweetness, has a pleasant warming sensation on the palate, and gives us all that warm, cozy feeling that’s reminiscent of the holidays. I for one love ALL things pumpkin and eat/drink it no matter what time of year it is.

With my Pumpkin Spice Latte Overnight Oatmeal, made with the best of Bob’s Red Mill ingredients of course, you can have pumpkin spice latte deliciousness right in your own home…for breakfast! Forget just having a drink…you can have a whole pumpkin spice latte meal.
Pumpkin Spice Latte Overnight Oats
- Prep Time: 5 mins
- Total Time: 5 mins

Ingredients
- ½ cup Bob’s Red Mill Gluten-Free Quick Oats
- 1 scoop Bob’s Red Mill Chai Protein Nutritional Booster
- ½ cup pumpkin puree
- 1 5.3 oz container of Silk Vanilla Dairy-Free Yogurt
- ¼ cup non-dairy milk
- 1 tsp instant coffee granules
- ¼ tsp cinnamon
- ½ tsp pumpkin pie spice
- Sprinkle of sea salt
- Toppings: Bob’s Red Mill shredded coconut, Bob’s Red Mill buckwheat groats, raw nuts, instant coffee
Instructions
- Mix all ingredients together and place in the refrigerator overnight. In the morning, top with desired toppings and serve cold!
