Not all of us out veggie lovers.
Kids usually get the ‘veggie-hating’ wrap, but I know PLENTY of adults that aren’t big fans either! In fact, some have a pretty hard time getting in their daily recommended servings of vegetables.
Vegetables are some of the healthiest foods on earth and they provide nutrients that can’t be found in any other food group. So needless to say, it’s important to make sure you’re getting an adequate amount in your diet.
With that said, eating vegetables is not always the most fun if you don’t like the taste or haven’t found a way to prepare them that you enjoy. People tend to rely on concentrated veggies juices, cheese laden sauces to mask the taste, overly steamed broccoli, and ‘green superfood’ powders. Those can be helpful to some degree, but nothing beets ? (punny!) fresh veggies being used in homemade recipes that taste great.
Lucky for me, I am a certified veggie fanatic! But that doesn’t mean I’ve forgotten about the rest of you. Since June is National Fruit & Vegetable Month, I thought I’d do my part in helping others eat and learn to actually enjoy vegetables!
Today I’ve rounded up the best hidden-veggie baked good recipes from around the web. Who doesn’t love a sweet treat, right? Baked goods can be the perfect vehicle for sneaking some veggies into your diet.
Chocolate lovers…get excited. A lot of these recipes showcase chocolate as the star ingredient. Let’s face it, there isn’t a food out there that can’t be made delicious when combined with chocolate. Well, maybe…fish. Chocolate-covered fish would not be good. ?

So have I convinced ya? Veggies are delicious on their own in my opinion, but they also lend themselves very well to baked goods and desserts! It’s a great way to add extra vitamins and nutrients to your favorite sweet (or savory!) treats.

My favorite way to eat vegetables is fresh or roasted with a tiny bit of olive oil and lots of cloves of garlic, but we like to hide vegetables in treats and smoothies as well. Just the other day, I baked a wonderful chocolate-chocolate cake that was filled with shredded zucchini–lots of it! Found that recipe on line too, and will keep it handy.

This post is making me wonder how much my own mother snuck into things growing up! My boyfriend has made the beetroot chocolate brownies/cupcakes before and you really can’t tell (he didn’t ground up the beetroot enough so I got a string of it in mine, but close enough!)

These looks great. You’d never know they had veggies in them. I’m a veggie lover too so don’t need to hide them in things, but it is nice to make a healthier alternatives sometimes. I made a cake using summer squashes once, it was delicious.
