Hey friends! How’s the week going for you? I cannot believe June is almost done and that we are already going into Fourth of July week. Summer is FLYING by. In some ways, I don’t mind that…like in regards to my grad school summer classes. I’m almost done with my longest (and hardest) course of the semester, so that feels good. But in other ways, I wish time would SLOW down. Sure I have a lot to look forward to this fall (more on that to come!), but summer is FOREVER my favorite season and I wish it wouldn’t come and go so quickly, ya know?
In other news, I am MOVING….AGAIN! Can you believe it? As much as I love my little apartment, I had the opportunity to move into a BRAND NEW, beautiful two bedroom apartment in my old neighborhood (shoutout to Elmwood Village) that I just couldn’t turn down. I’ll be living with a roommate for the first time and I am really excited to have a little more space. Plus, Ella will have more room to roam around and I am so happy about that!
Another new thing in my life, I sold my car! That’s right…I am officially a fully green commuter. Walking, running, and biking are my jam anyways so it only made sense to get rid of something that I was paying insurance on and not even using! It will be a big savings in the long run and since Buffalo is FINALLY getting Uber and Lyft, I’ll still have options when it comes to emergencies and bad weather days.
So yes. LOTS going on with me right now. Still working 3 jobs, balancing grad school, and enjoying my favorite season with my best friends. This week is ESPECIALLY busy because I have to be out of my current apartment by July 1st. Needless to say, I’ve been packing and starting to move stuff little by little everyday.
No one ever tells you how difficult moving is! And having to do it twice, only 6 months apart from each other, is crazy! It also takes a lot out of you. Exhaustion after moving is REAL. I’ve been needing lots of snacks to keep my energy up and going all day!
Quick, easy, and convenient is the name of the game lately when it comes to meals and snacks. Today I’m sharing one of my go to ENERGY BOOSTING snacks. Whether you’re moving like me or just lead a very busy, active lifestyle, these Chocolate Peanut Butter POWER Bites are PACKED with protein, healthy fats, and complex carbs to keep you going all day. Plus, they taste like dessert!
But seriously, when is chocolate and peanut butter NOT a good combination!?

Ingredients
- 10 oz purple sweet potato, peeled, cut into cubes, steamed, and mashed
- ¼ cup gluten-free quick oats
- ½ cup chunky peanut butter
- 1 scoop vegan chocolate peanut butter protein powder (43 grams)
- ¼ cup chopped dried fruit (I used a mixture of cherries and cranberries)
- ¼ cup vegan chocolate chips, chopped
- ½ tsp cinnamon
Instructions
- Place all ingredients into a large mixing bowl. Use your hands to mix everything together until fully combined. Form 10-12 bites. Place the bites in the refrigerator for at least 15 minutes to set. Store in the fridge.
The addition of purple sweet potatoes in these bites make them so satisfying! They add awesome texture (making these doughy and dense) and also are a great source of carbs for pre- or post-workout nutrition. The Chocolate Peanut Butter protein from Amazing Grass is one of my favorites (it seriously tastes like Reese’s Peanut Butter Cups!) and adds great flavor to this snack recipe.
I keep mine in the refrigerator so they are a bit firmer when I’m ready to eat them. One or two (OR THREE! 😉 ) keeps me satisfied in between my meals and makes refueling on the go super easy…and delicious!
