These are some of my FAVORITE flavors and to be honest, I usually make treats and snacks with these flavors all year round because I just love them so much!
Another season I eat all year round no matter the season or temperature? Ice cream…or even better gelato. Specifically my favorite VEGAN gelato from Nubocha.

Vegan Salted Caramel Pumpkin Sundae
This Vegan Gluten-Free Salted Caramel Pumpkin Sundae with Homemade Date Caramel Sauce is the PERFECT fall dessert. Salted caramel gelato and pureed pumpkin come together for a delicious creamy base that’s topped with date caramel sauce, pumpkin seeds, coconut, and your favorite pumpkin flavored granola or granola bar.
It’s a taste and texture experience not to be missed! Even better…it’s a healthy, no added sugar way to satisfy your sweet tooth and fall flavor cravings. 😉
Salted Caramel Pumpkin Sundae
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 2 servings 1x
Ingredients
For sundae base:
1 pint of Salted Caramel Nubocha Gelato (Italian Vanilla works well too!)
1/2 cup pumpkin puree
1/2 tsp cinnamon
For Date Caramel Sauce:
6 pitted medjool dates, chopped
1/2 cup warm water
1/2 tsp potato or corn starch
Toppings:
1 Cashew Ginger Pumpkin Seed Lupii Bar, finely chopped (or another pumpkin flavored granola bar or pumpkin granola)
Instructions
Let gelato sit out for about 10-15 minutes until it is very soft.
In a bowl, mix together cinnamon, pumpkin, and gelato until well combined and smooth. Place in the freezer for at least 2 hours to re-freeze.
While gelato is freezing, place dates and water in a microwave safe bowl. Microwave on high for 1.5 minutes.
Remove from microwave and place date-water mixture and potato starch in a high speed blender. Blend until smooth. Place date sauce in to a small dish and set in the fridge.
Once gelato has firmed up in the freezer (about 2 hours later), scoop into two bowls, spoon date caramel sauce on top of each, sprinkle coconut, pumpkin seeds, and the chopped Lupii bar on top.
Serve immediately!
This delicious seasonal sundae is vegan, gluten-free, and has ZERO added sugar! The base has the perfect mix of salted caramel and pumpkin spice flavor…and the toppings add all sorts of fun textures to compliment the creaminess of the gelato.
