Did you know it’s been OVER A YEAR since I went dairy-free?
And since then, I’ve also adopted a 90% plant-based diet (not 100% because I still enjoy seafood a few times a month).
My original decision to go dairy-free came from wanting to experiment on myself a little and see if eliminating dairy products from my life would help my skin, bloating, and inflammation issues.
Clearly since I’ve remained dairy-free all this time…it’s made a HUGE positive difference.
And honestly, I don’t miss dairy at all. I was never a huge cheese/yogurt/cottage cheese person in the first, but ice cream is a different story. I’ve been on the hunt the whole time I’ve been dairy-free to find a frozen treat that rivaled the traditional dairy-free ice creams/frozen yogurts/gelatos we’re all used to.
Well, I can finally say I’ve found a healthy, dairy-free treat that is even BETTER than the original.
Enter Nubocha Gelato.

I’ve seriously never had a vegan gelato that has the SAME texture of actual gelato and is also so healthy. All Nubocha gelatos are:
- low-cal (250-330 per pint)
- Project Verified Non-GMO certification for all their flavors
- dairy, soy, gluten and coconut free
- vegan, keto, and paleo-friendly
- 9 ingredients or less
- 7 or fewer net carbs per container
Every flavor (all 5 of their incredible varieties!) are made with simple ingredients including: spring water, nut butters (like almond, peanut, cashew, and pistachio), cacao, and sweetened with allulose.
What is Allulose?
Allulose is a revolutionary new low-cal sweetener that tastes (and acts!) like sugar when used in products like Nubocha Gelato.
Allulose is one of many different sugars that exists in nature in very small quantities. It was initially found in wheat and has since been found in certain fruits including jackfruit, figs and raisins. It’s classified as a “rare sugar” which makes it better for us and our digestion because it’s not artificial like a lot of sweeteners used in other brand of low-cal ice cream and gelato products.

I’ve definitely been doing some recipe testing with it lately and so far everything has been a winner.
Especially this Vegan Peanut Butter Chocolate Chip Skillet Cookie Sundae I am sharing today.
This recipe is filled with ooey gooey cookie deliciousness. The soft and doughy half-baked cookie skillet is full of peanut butter & chocolate, while bursting with whole grain goodness and healthy fats. When paired with the cold creamy goodness of Nubocha Gelato, it’s a match made in dessert heaven. A vegan, gluten-free treat you can feel good about indulging in.
Vegan Peanut Butter Chocolate Chip Skillet Cookie Sundae
- Prep Time: 5 minutes
- Total Time: 5 minutes
- Yield: 8 servings 1x
Ingredients
1 vegan peanut butter chocolate chip oatmeal skillet cookie
2 pints of Nubocha Gelato (flavor of choice…I suggest Italian Vanilla or Peanut Butter)
Optional: vegan chocolate chips, chocolate syrup
Instructions
Prepare skillet cookie according to linked recipe.
While cookie is still warm, slice into 8 pieces, plate each slice, and top with a scoop of Nubocha Gelato.
Sprinkle chocolate chips on top and drizzle with chocolate syrup if desired.
I cannot even express how good this combo is! The warm cookie. The cold gelato. The perfect contrast of tastes and textures. AKA a MUST TRY for all of you.
