Did you know Peanut Butter Pie was (is?!) my ALL TIME favorite dessert growing up? It’s essentially a creamy peanut butter pie filling in an Oreo cookie crust. No baking or cooking involved…just a little time in the freezer. As someone who LOVES easy recipes, a dessert that can be set in the freezer for a few hours while I get other things done is ideal for me.
And that’s exactly what I’m sharing with you today. 🙂
These 3-Ingredient Vegan Frozen Dessert Bars are about as easy as healthy desserts come.
Only 3 ingredients, 100% vegan and gluten-free, no added sugar, and NO cooking or baking required. The perfect dessert recipe to make on the fly when you’re craving something sweet after a meal or even for a snack…and made solely from ingredients you can feel good about eating.

All you need to make these delicious layered dessert bars is:
Nubocha Gelato (flavor of choice!)
Coconut Oil
Granola of choice (I used this one!)

And having made these bars several times now, every flavor is delicious in this recipe!
3-Ingredient Vegan Frozen Dessert Bars
- Prep Time: 3 hours
- Total Time: 3 hours
- Yield: 9 bars 1x

Ingredients
2 pints of Nubocha Gelato, flavor of choice
3 cups of granola of choice (I used this one!)
1/4 cup coconut oil, melted
Instructions
In a food processor, blend granola and coconut oil until well combined. Lightly grease an 8×8 baking dish. Press granola mixture into the prepared baked dish so that it is evenly distributed. Place in the freezer for at least an hour so it firms up.
Take two pints of Nubocha Gelato out of the freezer and let them sit for 5-10 minutes so they are soft and easily scoopable and spreadable.
Remove baking dish from freezer, scoop gelato on top, and spread so that it evenly coats the crust mixture. Top with chopped dark chocolate, cocoa powder, or chocolate chips if desired.
Place back in the freezer for 1-2 hours.
When ready to serve, let the dish sit out for 5-10 minutes so it is easier to cut into.
