Homemade, healthy pop-tarts filled with the flavors of fall! These Apple Pumpkin Protein Pop-Tarts are grain-free, have no added sugar, and are super easy to make. A great alternative to traditional toaster pastries.
My mom LOVES Pop-Tarts. Specifically Unfrosted Cherry Pop-Tarts (yeah, I don’t get it either! Ha!), which they stopped making decades ago.
For years, now I’ve been trying to find an alternative for her and have even tried to make my own homemade version a few times. None of them have been total fails…but they also haven’t been hands down winners either.
That is until now!
Baking with Almond Flour
There’s nothing I love more when I have a little bit of free time than experimenting in the kitchen. And I always have my favorite Bob’s Red Mill baking ingredients on hand so it’s easy to just throw things together and see if the result is worthwhile.
With my mom’s love of Pop-Tarts in mind and a new bag of Bob’s Red Mill Almond Flour in my pantry, I decided it would be fun to see if I could make a grain-free, PROTEIN PACKED, healthy pop-tart. One with all of the flavors of fall no less!
If you haven’t baked with almond flour before, you’re missing out. It makes baked goods taste buttery and rich, with no added oils or fats. It’s gives baked goods the perfect light, yet rich tasting texture….almost reminiscent of short bread in some cases. Or in the case of the recipe I’m sharing today, the slightly crumbly texture and sweet taste you love about Pop-Tarts.
Some other benefits of baking with Bob’s Red Mill Almond Flour…
- naturally grain-free and gluten-free
- good source of Vitamin E and magnesium
- low-carb compared to traditional flours
- only made with almonds
- high in healthy fats and fiber

Grain-Free Apple Pumpkin Pop-Tarts
- Prep Time: 70 minutes
- Cook Time: 10 minutes
- Total Time: 1 hour 20 minutes
- Yield: 4-6 pop-tarts 1x
- Category: dessert
For pastry dough:
3/4 cup Vanilla Whey Protein
1/2 tsp. baking powder
1/4 tsp. sea salt
1 tsp vanilla extract
3 oz liquid egg whites
Egg white wash: 2 tbsp. liquid egg whites + 1 tbsp. water
2 tbsp. unsweetened apple butter
2 tbsp. pumpkin puree
1/2 tsp. cinnamon
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a medium bowl, combine almond flour, protein powder, sea salt and baking powder. Set aside.
In a small bowl, whisk together vanilla extract and egg whites. Pour egg white mixture into dry ingredients and fold until a dough forms (dough should be pliable but not crumbly or stiff, using your hands towards the end to make sure it is evenly combined. Roll dough into a ball, cover the bowl with a paper towel or plastic wrap, and place in the fridge for at least one hour to chill. place it into a ball.
Remove dough from fridge and place on parchment paper. Using a rolling pin, roll out the dough to 1/4 inch thickness. Cut 6 rectangles (about 3 inches long and 2 inches wide) and set aside. Collect the scraps together and form another dough ball. Roll out remaining and cut more rectangles, repeating the process until the dough is full used up. You’ll get 8-12 rectangles which will make 4-6 pop-tarts. Place all rectangles on a parchment paper lined baking sheet.
Make filling by mixing pumpkin, apple butter, and cinnamon in a small bowl.
Place a tablespoon of filling into the center of half of your rectangles. One by one, place a second rectangle on top of each of the filling-topped rectangles and press down all of the sides using a fork.
In another small bowl, whisk together egg white wash. Brush the top of each pop-tart with the egg white wash.
Prick the top of each pop-tart multiple times with a fork and place in oven to bake for 10 minutes, until they’re a light golden brown. BE CAREFUL NOT TO OVERCOOK! Remove them from the oven, and allow them to cool on the baking sheet.
Serve warm and store in the fridge for 3-5 days.
