Pumpkin Spice Lattes. The quintessential beverage of fall. Am I right…or am I right?
Have you had your first of the season yet? I had one the other day (albeit NOT from Starbucks…is that breaking the rules?!). I got it iced instead of hot because it was a rare ‘warm-ish’ day around the city of Buffalo! Again, I’m holding on to those summer temps for as long as I can. A bit contradictory since I’ve now started indulging in all the flavors and treats of the season!
I guess I’m a fair-weathered fall love in a sense! I love the flavors, the scents, and all the colors, of course. But the fact that winter is just on the horizon tends to get me down!
So how’s a girl to cope? With fall baking of course! Seriously, when is baking NOT the best option!?
Inspired by my first PSL of the season, I decided to try my hand at making a healthy, seasonal snack that has ALL the flavor of your favorite fall drink but in a convenient, easy to make (and eat) form! Protein bars it was.
I had a few goals for these bars. I wanted them to be:
vegan
gluten-free
free of added sugars
easy to throw together
and…
FULL of the classic PUMPKIN SPICE LATTE flavor we’ve come to expect each fall
I am happy to report…6 out of 6! We nailed it, friends.
Pumpkin Spice Latte Protein Bars
- Prep Time: 5 mins
- Cook Time: 25 mins
- Total Time: 30 mins
- Yield: 9 bars 1x
- Category: Sweet Snacks
Ingredients
- 1 cup gluten-free quick oats
- ½ cup Nuzest Vanilla or Cappuccino Protein Powder (about 45 grams)
- ½ cup apple sauce
- 3/4 cup pumpkin puree
- 1/4 cup non-dairy
- 1–3 tsp NuNaturals Pumpkin Spice Stevia Syrup (depending on how sweet you want them!)
- 1 tsp vanilla bean powder
- 1 tbsp instant coffee
- 1 tsp pumpkin pie spice
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- chopped walnuts, optional
Instructions
- Preheat oven to 350. Line an 8×8 baking square with parchment paper. Combine dry ingredients in a bowl. Add wet ingredients and mix well. Spread batter evenly in prepared baking dish. Bake for 25-28 minutes or until a knife comes out cleanly from the center of the bars. Allow bars to full cool before slicing into 9 equal pieces.
Soft-baked, densely satisfying, and robustly flavored with pumpkin spice sweetness! Nothing better, folks. Nothing better.
The awesome protein content in these delicious seasonal bars comes from my favorite plant-based protein, Nuzest! You can use either their Vanilla or Cappuccino flavor in this recipe and the bars will turn out equally as yummy. In fact, you’re in luck! I have to admit that I’m a bit crazy in love with the cold brisk fall days, but I have really loved summer this year more than previous years! Also, I think one of the best ways to transition into fall is to use all those yummy fall veggies and fruits God has so awesomely created in His good pleasure and bake them/cook them into yummy goodies like this.
