High protein, soft-baked banana pumpkin spice bars are perfect for a healthy snack when you’re craving something sweet! Gluten-free and made with no added sugar.
If you know me, you know I’m a pumpkin ALL year kind of gal.
I don’t wait for the PSL to come back at Starbucks or for the leaves to start changing colors to enjoy pumpkin in a bunch of different ways. My favorite ways to use pumpkin include:
- stirred into oatmeal
- added to overnight oats
- blended into smoothies
- mixed into pancake batter
- baked into a cake
- mixed into cookie dough
- made into cupcakes
- made into bites
- baked into granola
And now….baked into snacks bars!
Baked Banana Pumpkin Spice Bars
The Banana Pumpkin Spice Bars I am sharing today are high protein and made with no added sugar thanks to my go-to whey protein from Natreve Wellness.
If you’re unfamiliar with Natreve, here’s why they are my GO-TO for protein powders…

I used the French Vanilla Whey in this recipe and it baked up PERFECTLY.

PrintBaked Banana Pumpkin Squares
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes
- Yield: 9 squares 1x
Ingredients
1.5 ripe bananas, mashed
1/2 cup pumpkin purée
1/2 cup liquid egg whites
1 cup unsweetened vanilla almond milk
1 tsp vanilla extract
1 cup gluten-free oat flour
1/2 cup gluten-free quick oats
1 scoop Natreve French Vanilla Whey Protein Powder (38 grams)
1 tsp cinnamon
1/2 tsp salt
1/4 tsp ginger
1/4 tsp nutmeg
1 1/2 tsp baking powder
Optional: 1/2 cup pumpkin seeds, stirred in before baking or sprinkled on top before baking
Instructions
Mix the dry ingredients and the wet ingredients in separate bowls. Fold in the wet to the dry and stir to combine. Place mixture into a well oiled baking square (8×8) and bake at 375 for 30 minutes or until a knife comes out clean from the center. Let cool completely before slicing into 9 squares. Keep in the fridge for up to 5 days.
These bars are so easy to make and KID-APPROVED too for all you parents out there. They make a great sweet treat to pack in a lunchbox for work/school or for a little afternoon pick me up with a cup of coffee.
I have made these several times since first creating the recipe and I love them more every time. I’d almost call this CAKE instead of bars because the texture is so perfectly light and fluffy, but I’ll go with bars so they feel more snack-y. 😉

Can you omit the protein powder?
Hi! I would not recommend that. The bars will not bake or taste the way they should. If you try it, I can’t vouch for the results.
