Easy to make, gluten-free Pumpkin Chocolate Chip Muffins! Dairy-free, no added sugar, oil-free, and full of whole grain fiber.
Muffins are one of my FAVORITE baked goods to make. I love a handheld sweet snack that can be topped or filled with all sorts of goodness.
Obviously I’ve been on a pumpkin kick lately, so you KNOW Pumpkin Muffins were bound to happen at some point. Specifically Pumpkin Chocolate Chip Muffins. 😉
Because chocolate goes with EVERYTHING.
One Bowl Muffins
Not only are these muffins totally delicious, they’re also SUPER easy to make. You literally toss EVERY ingredient (minus the chocolate chips!) into a food processor, blend, scoop into the muffin tins, sprinkle with chocolate, and bake! Gotta love that easy clean up. 🙂
Easy Gluten-Free Pumpkin Chocolate Chip Muffins
These muffins are:

Easy Gluten-Free Pumpkin Chocolate Chip Muffins
- Prep Time: 10 minutes
- Cook Time: 35
- Total Time: 45 minutes
- Yield: 12 muffins 1x

Ingredients
1 1/2 cup gluten-free quick oats
1/2 cup coconut flour
1/2 cup pumpkin puree
1/2 cup applesauce
1/2 cup egg whites
1/2 tbsp pumpkin pie spice
1/2 tsp baking powder
1 cup plant milk
1/4–1/2 cup vegan dark chocolate chips
Optional: 2 tbsp maple syrup if you like your baked goods a little sweeter!
Instructions
Preheat oven to 350. Line a muffin pan with 12 aluminum muffin cups and set aside.
Place ALL ingredients (except chocolate chips) in a food processor and blend on high until smooth.
Scoop batter evenly into muffins cups and sprinkle with chocolate chips (the more the merrier!).
Bake for 30-35 minutes. Remove from oven and let the muffin cool completely on a wire rack before serving!
