Easy Gluten-Free Pumpkin Chocolate Chip Muffins

1 1/2 cup gluten-free quick oats

1/2 cup coconut flour

1/2 cup pumpkin puree

1/2 cup applesauce

1/2 cup egg whites

1/2 tbsp pumpkin pie spice

1/2 tsp baking powder

1 cup plant milk

1/41/2 cup vegan dark chocolate chips

Optional: 2 tbsp maple syrup if you like your baked goods a little sweeter!


Preheat oven to 350. Line a muffin pan with 12 aluminum muffin cups and set aside.

Place ALL ingredients (except chocolate chips) in a food processor and blend on high until smooth.

Scoop batter evenly into muffins cups and sprinkle with chocolate chips (the more the merrier!).

Bake for 30-35 minutes. Remove from oven and let the muffin cool completely on a wire rack before serving!
