Soft n’ sweet Paleo Pumpkin Coconut Crumb Cake with Pecans! Made with coconut flour, grain-free, totally vegan, and no added sugar.
Coconut flour is one of my favorite baking ingredients…but it’s also one of the most difficult to work with! It’s SUPER absorbent which means you need more liquid than usual and it’s also very hard to bind…which means you usually need eggs.
But recently, I had my heart set on making a fully vegan AND paleo coconut flour cake. When I received a bag of Judee’s Coconut Flour in the mail, I knew it was the perfect time to start experimenting.

Paleo Pumpkin Coconut Crumb Cake with Pecans
With Judee’s Coconut Flour and Erythritol on hand, I set out to make a soft-baked cake for fall! The result was an incredibly delicious Pumpkin Coconut Crumb Cake with Pecans! It’s paleo-friendly, totally vegan, 100% gluten-free (thanks to Judee’s!), and sugar-free.
The soft, crumbly texture paired with crunchy pecans and creamy cream cheese frosting?! Absolutely INCREDIBLE.
Vegan AND Paleo-Friendly
This delicious cake is simply made with:
- coconut flour
- almond flour
- erythritol
- coconut milk
- coconut oil
- vanilla
- apple cider vinegar
- cinnamon
- pecans
This healthy, easy to make cake will be a staple all season long and is even perfect for the holidays too! Swap out a traditional pumpkin pie with this wholesome, paleo and vegan alternative. 🙂

Ingredients
1 cup coconut milk (from a can!!)
1/2 cup pumpkin puree
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
1 cup Judee’s coconut flour
1/4 cup almond flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 cup Judee’s erythritol sweetener
3/4 cup raw pecans, chopped
Optional: homemade vegan cream cheese frosting or Simple Mills vegan vanilla frosting
Instructions
Preheat oven to 350 degrees F. Lightly grease an 8 inch round cake pan with cooking spray and set aside.
In a small bowl, whisk together coconut milk, coconut oil, vanilla extract, vinegar, and pumpkin until combined. Set aside.
In a medium sized mixing bowl whisk together the flours, erythritol, cinnamon, and baking soda until no lumps remain.
Pour the wet mixture into the dry and stir to combine. The batter will be very thick and look more like dough than typical batter. I suggest mixing everything together with your hands instead to make sure it gets evenly incorporated. Once everything is mostly combined, pour in pecans and continue mixing with your hands so they are evenly distributed.
Once fully combined transfer the batter/dough to your prepared cake tin and press it down evenly in the pan.
Bake for 25 minutes or until the edges are golden brown. The cake will continue cooking once removed from the oven!
Transfer the cake pan onto a wire cooling rack and let cool. Make sure it’s completely cooled before frosting. I suggest frosting the cake in the pan and then slicing individual pieces to serve as the cake has a crumbly, flaky (delicious!) texture.
This cake is also delicious on its own without frosting so just keep that in mind.
