Vegan Double Chocolate Brownies

Ingredients
- 1 cup gluten-free oat flour
- 8 medjool dates + ¾ cup water, pureed together
- ¼ cup unsweetened cocoa
- ½ tsp vanilla bean powder or extract
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ cup no sugar dark chocolate chips or chopped dark chocolate
- water, as needed to thin batter
Instructions
- Preheat oven to 350. Line an 8×8 baking dish with parchment paper or spray well with cooking spray.
- In a large bowl combine oat flour, cocoa, baking powder + baking soda, and vanilla bean powder. Pour in date puree. Mix together until evenly combined. Fold in the chocolate chips and stir.
- Spread brownie mixture into the prepared baking dish. Bake for 20 minutes. Remove from oven, let cool on a wire rack, slice, and serve with banana ice cream for a fully vegan dessert!

Hmmm… it depends on my mood. Sometimes I love a handheld dessert like a delicious chocolatey brownie or a cookie and sometimes a slice of cake with ice cream sounds really good! Lately with all the heat, ice cream has sounded the best!

I have to admit, I like a really fudgy brownie, Im just not a cake fan. But my grandma prefers a cake brownie and loves dates so this would be perfect for her! I love how natural and light these are. Great recipe.

Oh these look amazing! I have been refined sugar free for the whole year so far and plan to continue. I’d probably just use cacao nibs in place of the chocolate chips. So pleased to see this great recipe #brillblogposts

These are amazing!!! So sweet and pretty dense but fluffy at the same time (if that makes sense). Definitely would make again and serve to friends!!

I must say that after reading through sixteen comments from people who didn’t even make the recipe, I feel like I’ve had my time wasted. However, I would like to comment that I did make the recipe and it is very good. I doubled all the ingredients but used the same size pan, which made it more thick and cakey. I didn’t have any chocolate chips, so I substituted two tablespoons sugar + two tablespoons coconut oil. It came out light and cakey, and very sweet and chocolaty. It was a much darker brown than in the photos. Maybe there’s something wrong with the lighting in the photos.
