How to Make Cottage Cheese Brownies
These brownies are simply made with:
- cottage cheese
- cocoa powder
- sugar-free chocolate chips
- gf oat flour
- granulated monk fruit
- vanilla
- eggs
- baking powder
To make these gluten-free, no added sugar brownies, you do the following:
- Preheat oven to 350 degrees F and line an 8×8 baking dish with parchment paper. In a food processor or high-speed blender (I use Ninja Kitchen or Vitamix), combine eggs, cottage cheese, and vanilla until smooth. Pour in melted chocolate and puree again until combined.
- Whisk together flour, baking powder, sweetener, and cocoa in a medium mixing bowl. Pour cottage cheese mixture into dry ingredients and stir until just combined.
- Pour batter into the prepared baking dish and bake for 20-25 minutes (or until a knife comes out cleanly from the center of the pan. Let the pan cool completely on a wire rack before slicing into 9 brownies.

3/4 cup gf oat flour

Optional mixins: 1 tsp instant coffee, 1/4 cup of walnuts

I made these tonight, I haven’t tried them yet. Mine came out more dense looking and not as fudge or fluffy as pictured. Any ideas? Is this mixture supposed to be rather thick?

Almond flour requires a lot more moisture and liquid so I am not sure of the ratios that would work. Feel free to experiment though!
My batter came out very dense because I used coconut flour so I added another 1/2 cup blended cottage cheese. We shall see, they are in the oven now
I always suggest following the recipe as intended. This will not work with coconut flour.
