The use of skyr instead of mayo and the addition of steamed lentils amps up the protein while keeping this traditional side dish low in fat. Potatoes are a staple this time of year. From mashed potatoes at Thanksgiving to comforting shepherd’s pie and hearty slow-cooked stews. They’re starchy, filling, and provide a ton of nutrients per serving.
Usually, potato salad is more of a summer dish, but I’ve found a unique way to prepare it that makes it perfect for any and all seasons. In fact, the recipe I’m sharing today is the perfect addition to your holiday table this year!
Usually potato salad is fat-laden, very heavy, and sort of…bland in terms of taste. But my kicked-up, protein-packed version is the total opposite!
By swapping out the traditional dressing ingredients (like mayo or cream-based sauces) for high protein, low sugar icelandic style Skyr from siggi’s, the calorie content is slashed in half and the protein content of the traditional carb-heavy side is increased. The slight sweet, tart flavor of the skyr adds keeps this salad light, zesty, and fresh!
The addition of pickles adds a nice salty counterbalance, while the steamed lentils add EVEN MORE plant-based protein to this healthy dish. This unique combination of tastes and textures will delight your holiday guests!

Ingredients
- 2 1/2 pounds of red potatoes
- 2 green onions, chopped
- 2 dill pickles, chopped
- large handful of dill, chopped
- 1/2 cup steamed lentils
- 4 oz siggi’s 4% Zesty Lemon Icelandic Style Skyr
- 4 oz siggi’s 0% Plain Icelandic Style Skyr
- 1 tbsp dijon mustard
- 3 tbsp whole grain dijon mustard
Instructions
Place potatoes in a pot and cover with water. Heat on medium (do not boil) until potatoes can be pierced with a fork (not falling apart).
Strain potatoes and place on a cooking sheet to cool for 10 minutes. While potatoes are cooling, place other ingredients in a large mixing bowl and stir together.
Add potatoes and mix together again. Place in the refrigerator to chill. Serve cold.
I am a big fan of siggi’s. Imagine the thickness of Greek yogurt and then times that by ten! siggi’s skyr is SO thick and creamy and I love that even their flavored varieties hardly taste sweet at all. In fact, they actually have MORE protein than they do sugar in each cup.
I find you only need a little bit of sweetness to really bring out their flavor and siggi’s does a great job of finding that perfect balance! The new 4% and 2% varieties are even more decadent tasting than the original 0% ones! My favorite flavors include Vanilla (love the flecks of real vanilla bean), Orange Ginger, and Pumpkin Spice (of course!).
I know this potato salad sounds a little kooky since it includes a ‘sweet’ flavor of skyr, but I swear it’s delicious! Like I said, siggi’s has a very light sweet flavor. It’s not overwhelming and it lends itself as a great counterbalance to the more salty ingredients.
I am alway looking for unique twists on classic dishes and this recipe certainly fits the bill! I can’t wait to share it with my family all holiday.

Wow! I first saw your recipe on Pinterest and I’m glad I stopped by to check it out. I just tried Siggi’s for the first time last week and was surprised at how tart it was. While I am not 100% sold on using the fruity variety I can totally see how the plain would be an excellent replacement for higher fat ingredients. I also love the idea of including lentils because they are so unobtrusive, but would add tons of benefits.
You could totally replace the fruit version with more plain! I’ve done it both ways!
I love making potato salad with plain greek yogurt. In fact, I replace all mayo and sour cream with plain greek yogurt – no one notices. 🙂
