Earlier this week we celebrated the DRINK of the season. Today, we’re keeping on with that theme and celebrating the FOOD of the season. No…not apples (though you know how I feel about those!), not pears, or butternut squash.
We’re talking PUMPKIN. All things pumpkin. Would you expect anything less from this YEAR ROUND pumpkin lover/eater?
For most, pumpkin season starts in September and ends somewhere around January/February. Not this girl! I eat it (and use it!) ALL YEAR. In fact, it’s been that way ever since I was a kid! Ya know, back when I spelled it pumkin? Haha, always forgetting that pesky second ‘p’.
My mom would often bake with it, mix it into soups and stews, or use it to bulk up oatmeal (something I still do to this day!). So needless to say, this superfood ingredient has made its way into QUITE a few Healthy Helper recipe over the years. Today, we’re taking a look back at some of the BEST ones.
