At least it is at my house! My grandma’s homemade pumpkin pie always graces our table and we all tuck into a slice a little while after dinner to cleanse our palates with something sweet and delicious.Some people like their pie warm. Some are all about the crust. But me? My favorite part is the filling! The creamy, cinnamon-y, pumpkin goodness that just epitomizes fall in food form.
To me it’s a shame that pumpkin pie only comes around during the holiday season. If I had it my way, I’d eat it year round! I mean, I already eat pumpkin year round so why not throw a few pies in here and there?Well, for one thing, it’s labor intensive! Making a homemade pie crust is no joke. Plus, even though I consider myself a pumpkin addict, I don’t think I could tackle a whole pie by myself! So I got to thinking…maybe I could make a simple, small batch, pumpkin pie recipe that can be enjoyed year round. For dessert. For snacks. Heck, even for breakfast! (Anyone else have pie for breakfast the day after Thanksgiving? *raises hand*)Not to toot my own horn, but I NAILED it. Thanks to a couple, healthy ingredients, I was able to create a single serve, crustless pumpkin pie recipe that tastes like the real thing yet is infinitely healthier!
You know my love of cooking and baking with tofu and after my success earlier this year making cheesecake with it, I thought I’d give it a try in pie! I grabbed some of my go-to medium-firm tofu from House Foods and got to work.The result? Vegan, gluten-free, FRUIT-SWEETENED pumpkin pies that have a creamy texture unlike anything I’ve ever eaten. Sorry Grandma, but I think you’ve met your match! 😉

Crustless Mini Pumpkin Pies

Ingredients (3 mini pumpkin pies)
- 3/4 cup pumpkin puree
- 6 oz medium-firm tofu (I use this from House Foods!)
- 1/2 of a very ripe banana
- 1/2 tbsp potato starch
- 1 tsp cinnamon
Preheat oven to 350. In a food processor, combine all ingredients and blend on high until smooth. Divide batter into three 4oz ramekins. Bake for 30 minutes. Remove from oven and let cool completely on a wire rack. Store in the refrigerator.
These personal pies are fun to serve your family because everyone gets their own individual ramekin! The prep process is not time intensive at all because you don’t have to deal with that pesky crust making and clean up is easy too!My favorite thing about this recipe?
