New year, new you. That’s all we’ll be hearing for the next few weeks, am I right? A focus on dieting, weight loss, getting ‘back on track’ after the holidays….all of which are debbie-downer topics, in my opinion.
Everyone is so cheerful and spirited during the holidays and then as soon as midnight strikes on December 31st people become so intense and hard on themselves. No more fun, no more merriment. Just gym sessions, strict eating regimens, and lots of structure.
Well I am here today to help you carry that holiday happiness into the New Year! What better way to ring it in than with NEW SNACKS. Forget changing your body, ‘fixing’ yourself, or going on some cleanse. The ONLY healthy change you need to make in your life right now is to SHAKE UP YOUR SNACKS!
Let’s face it, we ALL get into ruts with our snack routines. We get hooked on a certain combo or food and then eat it monotonously everyday or even several times during the day. People, you can only eat so many carrots with hummus!!
It’s time to take boring, bland snacks to the next level. Let’s make 2017 the year of the DELICIOUS snacks that are HEALTHY for you too! I promise that with the recipe I’m sharing today, snack time will be your new favorite time of the day. It sure is mine, after all!
There’s a few key criteria that a snack has to have in my eyes. It’s gotta taste good. It’s got to have a healthy balance of carbs, proteins, and fats. It’s got to be easy to eat on-the-go. And it has to be satisfying. BONUS if it has chocolate.
Fudge Graham ZonePerfect Nutrition Bars hit every one of those requirements and they are what inspired my latest snack recipe. May I present….FUDGE RIPPLE S’MORES MUFFINS!
OMG. You guys. I don’t say this often but I’ve outdone myself. I am actually hesitant to call these muffins because they are so darn CUPCAKE-like. But for the sake of snacking…we’ll stick with the muffin moniker.
They’re light, fluffy, and SO CHOCOLATEY! They’re made with oat flour making them gluten-free and whole-grain, full of protein from the chopped up ZonePerfect pieces, and have all the taste of a traditional campfire S’mores without all the sugar!
Fudge Ripple S’more Muffins
- Prep Time: 15 mins
- Cook Time: 20 mins
- Total Time: 35 mins
- Yield: 7 muffins 1x
- Category: Sweet Snacks
- 1 cup pitted dates
- 1 cup water
- 1 cup gluten-free oat flour
- ¼ cup cocoa powder
- 1 tbsp baking powder
- ½ tsp vanilla bean powder
- 1/4 cup almond milk
- 1/4 cup mini chocolate chips
- 1 Zone Fudge Graham Zone Perfect Nutrition Bar, finely chopped
- 7 marshmallows
- Preheat the oven to 350F.
- Combine the dates and water in a food processor or blender.
- Blend till smooth.
- Add the flour, baking powder, vanilla powder, and milk.
- Process to combine.
- Pour batter into a medium mixing bowl and fold in Fudge Graham ZonePerfect Nutrition bar pieces and chocolate chips. Mix until evenly combined.
- Divide the batter into 7 aluminum muffin tins.
- Bake for about 20 minutes at 350F, or until a knife comes out cleanly from the middle of the muffins.
- Cool muffins for about 5 minutes.
- Turn on the oven’s broiler.
- Place 1 marshmallow vertically in the center of each muffin.
- Place muffins back into oven and broil, watching the whole time, until marshmallows are golden brown and slightly puffed, 10 to 30 seconds. Press the marshmallows into the cupcakes to cover the whole top using the back of a spoon.
- Let cool and serve.
The golden brown marshmallow that serves as ‘frosting’ makes these absolutely perfect! Not only that, but also FUN to make! These would be a great activity for mom’s to make with their kids. And even more fun to enjoy together after baking.
These muffins are the perfect treat-like snack to get you thru the day and keep you on track in the New Year!
