Fudge Ripple S’more Muffins

  • 1 cup pitted dates
  • 1 cup water
  • 1 cup gluten-free oat flour
  • ¼ cup cocoa powder
  • 1 tbsp baking powder
  • ½ tsp vanilla bean powder
  • 1/4 cup almond milk
  • 1/4 cup mini chocolate chips
  • 1 Zone Fudge Graham Zone Perfect Nutrition Bar, finely chopped
  • 7 marshmallows

Instructions

  1. Preheat the oven to 350F.
  2. Combine the dates and water in a food processor or blender.
  3. Blend till smooth.
  4. Add the flour, baking powder, vanilla powder, and milk.
  5. Process to combine.
  6. Pour batter into a medium mixing bowl and fold in Fudge Graham ZonePerfect Nutrition bar pieces and chocolate chips. Mix until evenly combined.
  7. Divide the batter into 7 aluminum muffin tins.
  8. Bake for about 20 minutes at 350F, or until a knife comes out cleanly from the middle of the muffins.
  9. Cool muffins for about 5 minutes.
  10. Turn on the oven’s broiler.
  11. Place 1 marshmallow vertically in the center of each muffin.
  12. Place muffins back into oven and broil, watching the whole time, until marshmallows are golden brown and slightly puffed, 10 to 30 seconds. Press the marshmallows into the cupcakes to cover the whole top using the back of a spoon.
  13. Let cool and serve.
