What Makes These Red Velvet Marshmallow Protein Bars?
The base of these bars is adapted from my original 3-Ingredient Marshmallow Protein Bars. The combination of milk, gelatin, and protein powder creates an incredibly light and fluffy marshmallow texture when whipped.
For this red velvet-inspired variation, beetroot powder gives the bars their vibrant red color without using artificial food coloring.
Instead of traditional red velvet ingredients, this recipe uses Equip Foods Cookies & Cream Prime Protein (code healthyhelper saves) for a sweet, dessert-inspired flavor. The cookies and cream flavor pairs especially well with the fluffy marshmallow texture.
To finish everything off, I sprinkle Good Dee’s sugar-free chocolate sprinkles (code healthyhelper saves) over the top before refrigerating. They add a fun chocolatey finish without adding cocoa powder to the marshmallow mixture.

Tips For Making Marshmallow Protein Bars
Whip the mixture well. The whipping process is what gives these protein bars their signature fluffy texture, so don’t rush this step.
Don’t boil the gelatin mixture. Gently heat the milk and gelatin just until the gelatin dissolves.
Use a high-speed blender. A Vitamix or similar high-powered blender works especially well for whipping the mixture.
Add the sprinkles right away. Sprinkle the Good Dee’s chocolate sprinkles over the bars while the mixture is still fresh so they adhere to the surface before refrigerating.
Give them plenty of time to set. Refrigerate the bars for at least 6 hours. For the best texture, let them set overnight.
