Long time no food holiday talk, eh!? Well that changes today!
I am back on the food holiday bandwagon and today is one that I am super excited to celebrate. It’s NATIONAL BISCUIT DAY!
Seems sort of out-of-place, right? Usually when I think of biscuits I think of Thanksgiving or Christmastime. But I guess anytime can be good for biscuits when it really comes down to it. I mean who doesn’t love doughy, soft bread to snack on or serve with a meal?
The biscuits I’m sharing today are pretty unique….definitely not your traditional biscuit in terms of look AND taste. But that doesn’t make them any less delicious.
You’ve probably had sweet potato biscuits before, but never PURPLE Sweet Potato Biscuits. These dense n’ doughy delights are gluten-free, vegan, and SO PRETTY. Isn’t it fun to eat purple/blue foods?

Ingredients
- 11 oz Stokes Purple Sweet Potatoes, peeled, diced, and steamed
- 2 cups gluten-free oat flour (about 212 grams)
- 1 tbsp baking powder
- ¼ tsp baking soda
- 1 tsp cinnamon
- 2 tbsp all fruit jelly/butter
- 1 cup almond milk
- 1 tbsp lemon juice
Instructions
- Puree steamed purple potatoes in a food processor until creamy and smooth. Add in almond milk all fruit jelly, and lemon juice and puree until mixed in. Combine all dry ingredients in a large bowl. Pour in potato mixture and stir until just combined. Do not over mix. Using your hands, form dough into 15 small balls. Places balls on a parchment paper lined baking sheet and press down slightly on them. Bake for 15 minutes at 425. Cool on a wire rack before serving.
Whenever I eat purple sweet potatoes I am ALWAYS in awe that something so beautiful and colorful can be found in nature. Same with pitaya and blueberries! It’s truly amazing.
And ya know what else is amazing? These biscuits! I love eating them with a smear of butter and a drizzle of honey. The honey brings out the subtle sweetness of the potatoes and makes these irresistibly good. They’re especially good served warm! I just heat mine up in the microwave for a a few seconds and they taste like they did when they were fresh baked.
These are perfect for bringing to your next potluck or serving alongside your favorite grilled foods. Nothing says summer comfort foods like an outdoor BBQ complete with delicious biscuits! Move over cornbread, there’s a new bread side in town!

I love biscuits, and the excuse to add butter and honey to bread. 🙂 We love to serve bread with soup or spaghetti or lasagna. You can actually serve it with a lot of different meals.
My favorite potato is probably a sweet potato; I’ve never had a purple sweet potato.
You need to try a purple sweet potato!! They are SO yummy.
