Soft oat bites with all the taste and sweetness of fresh blueberries. Bursting with flavor, rich in antioxidants, and full of fiber. Vegan, gluten-free, nut-free, and no added sugar!
Today is a special day, friends! We’re having a celebration. A party of sorts. A BLUEBERRY BONANZA to be exact!
Blueberries are one of my favorite summer fruits. I buy frozen blueberries all year round, but during the summer months, fresh blueberries can’t be beat.
Not only is it a great time of year for them, but also blueberries are one of the most antioxidant rich foods you can eat. Pretty darn delicious too!
Wegmans recently had JUMBO blueberries in the produce area and I couldn’t help but buy a few pints. Of course, I could eat them by the handful, but I bought extra to do a little experimenting in the kitchen with.
My goal was to create a snack/energy bite that’s just as satisfying as typical no-bake bites but with no nuts, no added oil/fats, and of course no sugar added since the blueberries would be the star of the show anyways.
Luckily, my friends at Bob’s Red Mill make any recipe doable with their high quality products. I ALWAYS have their oats and coconut flour on hand and ended up using both in this recipe.
BLUEBERRY OAT BITES!
Adapted from my some of my other fruity bites I’ve made over the years, these blueberry delights are full of real blueberries, high in plant-based protein, and have the texture of a soft-baked cookie. They’re also vegan, low-fat, and sugar-free. Who needs added sugar when you have fresh, fruity summer blueberries?

Ingredients
½ cup Bob’s Red Mill whole grain rolled oats
1 tbsp Bob’s Red Mill coconut flour
1/2 cup no salt added chickpeas, rinsed and drained
½ cup fresh blueberries
1/3 cup unsweetened dried blueberries
½ tsp cinnamon
½ tsp vanilla extract
Instructions
In a food processor, combine all ingredients and blend until full mixed.
Form into 10 bite-sized balls and store in the freezer or fridge.

Oh wow these look great. I used to absolutely hate blueberries when I was younger. Even the thought of them made me queasy! Luckily I have come to my senses and really love them now.
