I’ve always been a fudge lover, but PEANUT BUTTER fudge has a special place in my heart. The first time I ever tried it was at a local candy store called Watson’s where my sister worked when she was a teenager. They had a special kind of peanut butter fudge there called ‘meltaway’ and it literally melted away in your mouth upon first bite. So smooth, rich, and delicious. Like the sweetest, creamiest peanut butter you’ve ever had in your life.
No other fudge (chocolate or otherwise!) has ever compared to that peanut butter meltaway fudge from my childhood. And to be honest, I am not sure I would want to try and recreate it! It was just that special. But that doesn’t mean I can’t make something equally as peanut butter-y and fudgy to enjoy on a daily basis.
Inspired by a few of my favorite kitchen staples, peanut flour and vegan protein powder (strawberry flavor for this recipe!), I thought it would be a fun to make a healthy, protein fudge. I even challenged myself to make it with as few ingredients as possible. Got it down to 5! Pretty good, eh?
These Peanut Butter & Jelly Protein Fudge Bars is INCREDIBLY easy to make and makes a for a great post workout snack since it’s so high in plant-based protein from both the protein powder and the peanut flour. A double dose of PLANT POWER!
Plus these bars are sweet and delicious without any added sugars or fats!
Peanut Butter and Jelly Protein Fudge Bars
- Prep Time: 10 mins
- Cook Time: 20 mins

Ingredients
- 3/4 cup pumpkin puree
- 1/2 cup vegan strawberry protein powder
- 2 tbsp coconut flour
- 1/2 cup peanut powder
- 1/4 cup + 2 tbsp of water
- 1/4 cup Nutsola Peanut Butter Superfood Mix (or another peanut butter granola!)
Instructions
Preheat oven to 350 degrees F. Mix protein powder, coconut flour, and pumpkin puree together. (use your hands so a thick dough forms) Press down dough evenly in a parchment paper lined loaf pan.
In a separate bowl, combine peanut flour and water. Mix until a paste forms. Spread peanut powder mixture on top of protein dough. Sprinkle Nutsola (or granola) on top.
Bake for 20 minutes at 350 F. Remove from oven and let cool completely before lifting parchment paper out of the loaf pan. Slice and enjoy! Store in the fridge for up to 5 days.
