The ultimate paleo tuna melt! These deliciously healthy open-faced sandwiches have everything you love about a classic tuna melt without using any dairy or gluten. They’re full of healthy fats, lean proteins, and even feature sweet potato toast instead of bread!

Wait, what? You haven’t heard of sweet potato toast!? It’s only the latest food craze that’s taking over the blog world….and well, basically, the whole damn internet!

Sure, I love my bread…like reeeeeally love it…but I am all for trying new things. THIS is one of those new things I am happy I experimented with. It’s just so darn cool and unique! Who would have ever thought to put sweet potato in a toaster. Now my mind is reeling with potential new ‘toast’ bases. Daikon radish? Jicama? Regular potatoes? What about fruits!?
Needless to say I have a lot of testing to do. But my sweet potato toast adventures are for another day. Today, is aaaaaaall about the toppings I chose to go on mine.
Seriously, what is toast without the toppings?! And from what I’ve seen, people have been pretty creative with their sweet potato toast creations. However, I’ve yet to see what I have to share with you today. In fact, I have never seen a recipe like this before!
Today is dedicated to my paleo friends out there. I am giving you two things that you probably think you’d never eat again while on a paleo diet. CHEESE and BREAD.
Okay, okay. So the cheese is dairy-free and the bread is technically sweet potatoes. But I guarantee you won’t miss the real things once you taste a bite of my Paleo Tuna Melts on Sweet Potato Toast!
YES. That’s right. PALEO Tuna Melts. They’re totally possible and totally delicious. All you need is a few key ingredients and a little belief that paleo masterpieces are possible. 😉
Here’s how these open-faced sandwich creations came to be…
+swapped out mayo for avocado
+swapped out cheese for Daiya brand dairy-free cheese (but any non-dairy brand would work…this one just MELTS the best!)
+swapped out bread for sweet potato toast
And most importantly…
+ did NOT swap out the tuna
In fact, I grabbed a can of my favorite Bumble Bee® Solid White Albacore Tuna to use in this specific recipe. It’s my go-to for recipes like my Grilled Mediterranean Zucchini Boats and my Hawaiian Tuna Burgers….but really I use it anytime I am craving seafood goodness!

Ingredients
- 1 large sweet potato sliced length wise into thin ¼ inch slices
- 1 can of Bumble Bee® Solid White Albacore Tuna
- 1 ripe avocado, mashed
- 7 grape tomatoes, sliced
- ¼ cup diced red onion
- 2 tsp of Dijon mustard
- 1 tsp lemon juice
- ¼ tsp cumin
- ½ tsp dried dill
- salt and pepper
- shredded non-dairy cheese (such as Daiya brand)
Instructions
- Toast sweet potato slices two times on the highest toasting setting on your toasted until mostly cooked through. Meanwhile, mix tuna with mashed avocado, grape tomatoes, red onion, Dijon mustard, lemon juice, cumin, dried dill, and salt and pepper. Preheat broiler (at 500 degrees). Lay each sweet potato slice on a parchment paper lined baking sheet. Top each slice with tuna mixture. Sprinkle non-dairy cheese all over the open-faced tuna sandwiches and place under broiler for 3-5 minutes or until cheese is melted and bubbly. Serve warm!

At the catering company I work for we have used sweet potato rounds for the base of appetizers. They look great, give a lot of color and they are gluten free! It is a great way to serve a bite sized delish bite and get some great nutrients too. I haven’t tried a tuna melt on sweet potato this will be on the menu soon! Sounds great!
