The only cauliflower crust recipe you’ll ever need! High protein, gluten-free, grain-free, and only TWO ingredients. This truly is the no-fail pizza crust recipe that anyone can make!
When I first created this recipe back in 2017, cauliflower was JUST starting to gain popularity.
Now, more than 3 years later it’s STILL having a moment. People thought I was crazy for making a “cauliflower crust” pizza back then….especially one this simple! Most people who tried to make complicated cauli-pizzas ended up with a soggy mess that fell apart as soon as you tried to cut it or lift it. That’s why when I figured out this hack after a ton of trial and error I was PUMPED to share it.
Unfortunately, cauliflower just wasn’t the IT food it is now back then…so this recipe faded into the archives. And since, so many companies have now come out with ready-made cauliflower crusts/pizzas you can buy at the grocery store, people lost interest in trying to make them from scratch.
But this recipe is worth trying. A few things that make it different…
- 2 ingredients…3 if you count the water π
- SO easy to make (don’t believe me? I just uploaded a step-by-step video of me making it on Instagram and saved to my highlights)
- paleo, gluten-free, grain-free, high protein, super low-cal, virtually no fat….this cleanest cauliflower crust you can make OR buy
- MUCH cheaper than the overpriced store-bought versions
What’s not to love?
I’ve been a huge fan of cauliflower crusts for years, so obviously I love this recipe. But I am also just a huge fan of cauliflower in general because it’s so versatile. I like to call it the ‘tofu of vegetables’ because it has so many uses and has a pretty neutral flavor making a great base for pizza! When you make pizza crust with cauliflower, it becomes the perfect vehicle for all your favorite toppings.
So today, I am REsharing my No-Fail Cauliflower Crust recipe with you. And when I say ‘no-fail’ it really is. Head to my Instagram highlights for video evidence if you don’t believe me!
PrintNO-FAIL Cauliflower Crust Pizza
- Prep Time: 10 mins
- Cook Time: 40 mins
- Total Time: 50 mins
- Yield: 1 crust 1x

Ingredients
- 300 grams riced cauliflower (about 2 heaping cups)
- ΒΌ cup (20 grams) unflavored egg white protein
- 3 tbsp water
Instructions
Place riced cauliflower, egg white protein, and water in a food processor. Blend until it stops mixing. Stop the machine scrape down the sides, and blend again until it’s mostly smooth. cauliflower, egg white protein, and water.
Place mixture on a parchment paper lined baking sheet and spread into a circle. Make sure the circle is not too thin as it will stick to the parchment paper. Bake for 40 minutes at 425 degrees. Remove from oven and flip crust onto a plate to remove the parchment paper. Top with desired toppings. Place back in the oven (on a new sheet of parchment paper) to cook toppings and melt cheese.
Notes
Liquid egg whites WILL NOT WORK in this recipe. You need to use egg white protein POWDER. Unflavored. I’ve linked to the kind I personally use.
This crust is gluten-free, grain-free, high protein and low carb as I mentioned above. It’s also A LOT better for you than anything you’ll buy at the store. Granted, cauliflower products have come a long way…but they still take a lot of unnecessary additives and unhealthy ingredients to make them marketable to the masses. So save money and skip the store-bought varieties for this homemade version!

I have yet to try to make a cauliflower crust – I love pizza dough way too much to sub it with cauliflower, BUT, I need to increase my veggies, so I might look into this as a random side dish or something. Is it crispy? Maybe I could chop it into pieces and dip it in salsa or make nachos out of it. I do have one question, though. Approximately how much is 300g of cauliflower? I don’t have a kitchen scale, so I was hoping you could estimate?
Also – do you process the cauliflower raw or are you supposed to blanch it first? Sorry if these are dumb questions, but I’m new to the world of veggies, LOL.

I love the flax seeds in this recipe…I had only seen it with cheese so I am definitely trying it this way! I love eggplants, goat cheese, olives, salmon and tuna as my toppings….not all together though π That black rice salad sounds so exotic!!

I’ll have to give this a try one of these days. The last time I remembered trying to make something with cauliflower (besides steaming it) was “mashed potatoes” and they came out pretty bad. Hope I have better luck with the pizza crust.

Been Waaay too long since I had the crumbly , gooood kabocha. I’ve had some awesome crown prince – which I find to be the exact same thing as kabocha , and even some yummy dry butternut, so I can’t really complain. Do you have a way to tell if they’re good or not before buying them?

Sounds great and so healthy. I have thought about making cauliflower crust before because I have to go grain free but the recipes I have seen usually call for eggs and I can’t eat them. do you have to cook the cauliflower first??
Nope!!
This is great! I love cauliflower and jumped on the pizza crust band wagon years ago, but I hated how the majority of the recipes you find are half cauliflower and half cheese! To calorie dense for me so my go to crust has always been just cauliflower and egg whites, sometimes I add some chickpea flower. I have never tried egg white protein however so I will have to give it a try.

I’ve been looking at alot of cauliflower crust recipes and this is the only one I’ve seen that says the cauliflower doesn’t have to be cooked first. Why is that? Also, can I just use one regular egg instead of the egg protein powder and water?
Nope! It will only work with the egg white protein powder. That’s why this recipe is unlike most other ones! π
Can the Egg White Protein and 3tbsp water be substituted with egg whites? If so, how many egg whites would I use?
Unfortunately you need the actual egg white protein powder for this recipe….egg whites will make it too watery and it won’t cook properly! I’m sorry.

Yeah this definitely sounds like the easiest cauliflower pizza crust and am loving you don’t have to squeeze out the cauliflower!! Would love to try this as I now have half a cauliflower leftover, but I don’t have unflavored egg white protein. Think I can swap in my unflavored whey protein?
