November is National Peanut Butter Lover’s Month, so it only seems fitting to have my first recipe of the month be peanut butter filled!
Plus, with the holiday season right around the corner, I wanted to share an easy snack/healthy dessert recipe that’s perfect for taking to a family get together or party.
I, for one, LOVE sweet dips. We’re talking yogurt dip with fruit over spinach dip with bread cubes. Don’t get me wrong, I like savory food too. But I think coming up with a sweet dip that’s healthy and that people will actually enjoy is an amazing culinary feat in itself!
The recipe I’m sharing was inspired by necessity. And by that I mean, I had a container of vegan cream cheese (this brand!) sitting in my fridge that needed to be used up within a day before expiring. As much as I love cream cheese, there was no way I could finish a whole tub of it on my own within a day. So instead of having a cream cheese eating contest with myself, I decided to brainstorm some easy ways I could use it up.
The idea that came to mind was genius…if I do say so myself. It combines two of my favorite foods, is vegan, gluten-free, sugar-free, and high in plant-based protein. Plus, it couldn’t get ANY easier to make. Literally just mixing the two ingredients together or, if you’re fancy, blending them in a food processor.
Behold…Low-Fat Vegan Peanut Butter Cream Cheese! The most delicious spread or dip for all your favorite snacks like sliced fruit, pretzels, graham crackers, or rice cakes.
Who knew such a simple recipe could be such a game changer?! When I first made this, I immediately went over to my parent’s apartment to have my dad try it. He loved it too and gave me the idea to make a whole snack/dessert tray with it. So perfect for giving people a healthier appetizer or dessert option for the holidays. And I promise, there won’t be ANY leftovers with this combo of foods!
