The easiest, cheesiest vegan mac n’ cheese you’ll ever make! Tastes just like a classic boxed mixed but is dairy-free, gluten-free, grain-free, and 100% vegan.
Plant-based products have come a LONG way in recent years.
Long gone are the days of tasteless, chewy veggie burgers being the only options for people wanting to eat vegetarian or vegan.
And frankly, I think it’s awesome! While I’m not vegan myself, I can definitely appreciate the benefits (health, environmental, ethical, or otherwise) of eating a more plant-forward diet. And if you ARE considering going vegan but are worried about missing some of your favorite foods, that is non-issue nowadays.
My Easy Vegan Mac n’ Cheese is a perfect example of this! It’s got the texture and taste of CLASSIC mac n’ cheese but is 100% vegan. AKA no dairy OR animal products. But I didn’t stop there…it’s also:
- gluten-free
- grain-free
- soy-free
- only FOUR ingredients
Basically, the EASIEST & CHEESIEST mac n’ cheese (vegan or not!) you’ll ever make.
Move over EasyMac! This recipe is coming for your territory.
EASY Vegan Mac n’ Cheese
- Prep Time: 5 minutes
- Cook Time: 10 minutes
- Total Time: 15 minutes
- Yield: 6-8 servings 1x
Ingredients
2 boxes of gluten-free, grain-free pasta (or another gluten-free pasta of choice, I used Banza wheels)
1 package of shredded vegan cheddar cheese
1 package of shredded vegan pepper jack cheese
2 tbsp vegan butter
1 can of unsweetened coconut milk
Lots of black pepper
Instructions
Put a large pot of hot water on the stove over high heat. Pour in pasta immediately (do not wait for water to bowl) and set a timer for 7 minutes.
Meanwhile, melt butter in a saucepan over medium heat. Add milk, cheese, and black pepper, continuously stirring until cheese begins to melt. Keep stirring until the sauce is creamy and smooth. Remove from heat.
When timer for pasta goes off, test it and see if it’s done enough for your tastes. If not, only keep it on the stove for about another minute because gluten-free pasta overcooks very easily. Once the pasta is done, drain it in a colander and place it back in the pot. Pour cheese over pasta and stir until the pasta is evenly coated with sauce.
Serve warm with extra pepper if desired.
Tip: This mac n’ cheese is even better the second day so make it ahead of time if you’re bringing it to a party, potluck, or tailgate!
This would be the PERFECT recipe to make for your Superbowl party or even just for a quick weekday meal. It’s obviously super easy AND kid-friendly. In fact, I bet your kids wouldn’t even know it didn’t come from the famous ‘blue box’.
Here are some fun ways to add even more nutrients and flavor if you don’t want to stick with plain mac n’ cheese:
- add cooked chopped broccoli
- add jalapenos and caramelized onions
- place mac n’ cheese in a baking dish and sprinkle GF breadcrumbs on top, place under the broiler until breadcrumbs are golden and crispy
- stir in crumbled tempeh bacon or veggie sausage
- stir in veggie meat crumbles and diced tomatoes
