Are you a granola lover? I am. I have been since I was little. There’s a famous granola recipe that’s been passed down from my great grandmother all the way down to my mom in my family. My mom’s been making homemade granola ever since I can remember and I’ve always enjoyed munching and crunching on it. Whether it’s on its own or with ice cold soy milk (don’t ask me why it always has to be soy milk!), I LOVE granola.
In a way, it’s more fun than cereal! There are just so many ingredient combinations that can create a ton of different varieties. It can be sweet, it can be savory, it can be crunchy, it can be chewy. The possibilities are endless when it comes to granola.
There are certain foods that I think everyone should know how to cook/bake. A good pasta dish, nicely charred grilled chicken, classic chocolate chip cookies, and hearty soup….to name a few. Another one of those is granola. In my opinion, EVERYONE should have a basic granola recipe to turn to.

….but never a basic recipe to start with if you’re new to granola making. Sometimes simplicity is best and the recipe I am sharing with you today proves that. It’s my go-to basic Date-Sweetened Granola recipe that I base all my other granola recipes on. It’s easy to make, sweet in taste, and super easy to customize no matter what flavor you’re thinking of making.

- Prep Time: 5 mins
- Cook Time: 15 mins
- Total Time: 20 mins

Ingredients
- 1 ½ cups puffed rice cereal
- ½ cup rolled oats
- 3 tbsp Medjool date paste
Instructions
- Preheat oven to 350. In a large bowl, combine all ingredients until everything is well coated. Evenly spread oat mixture on a parchment paper lined baking sheet. Bake for 15 minutes, stirring half way through.
Vegan, gluten-free, date-sweetened, and only 3 ingredients! It doesn’t get any better than that. Granola can get complicated…but it doesn’t have to be. You can totally make this recipe as is OR add in some fun ingredients to make a new variety. Here are some of my favorite mix-ins…
+nuts and seeds
+spices and herbs (for a savory version)
+dried fruit (add after baking so it doesn’t burn)
-shredded coconut or coconut flakes
-egg whites
-other cereals
–vanilla or vanilla bean powder
–coconut oil or walnut oil
-pureed fruit
-nut or seed butter
-citrus zest
Like I said above, the possibilities are ENDLESS.

I always make my granola with puffed cereal for the low calorie volume! LOVE the dates! I add egg whites to mine to get the puffed cereal nice and crispy

Okay you have officially surpassed me on genius ways to use dates! This looks like the best granola every not only because of the fruit-sweetening situation but also because puffed/crispy rice is the best granola add-in ever in my opinion <3 I know it would blow the 3 ingredient part, but some cinnamon in here…?

You may wish to specify certified GF rolled oats; those of us who are off gluten know to get those, but a friend might not! I’m one who can eat gf oats occasionally in baked goods, but mostly avoid them these days.
