High fiber and cookies sort of seems like an oxymoron. But NOT when it comes to these delicious soft-baked oat fiber cookies!
Have you ever baked with oat fiber before? It caught my eye as an ingredient as I was perusing Amazon the other day and I ordered some to see what healthy recipes I could make with it.
What is Oat Fiber?
Oat fiber is the inedible hull, hulk or outer shell of the oat grain. It is pure insoluble fiber which means that your body cannot digest any nutritional value, therefore it passes through the intestines undigested. Oat fiber is virtually indigestible, and therefore it contains zero carbs or sugars. The insoluble fiber helps reduce constipation, promotes a full feeling for long periods of time, and may help reduce overall LDL cholesterol.
Kind of cool to be baking with an ingredient that’s PURE fiber.
Oat Fiber Chocolate Chip Cookies
If you saw this tweet, then you know that cookies are BIG part of my diet. So of course I had to experiment with a new cookie recipe.
The result was these incredibly soft-baked HIGH FIBER chocolate chip cookies. I’ve truly never had a cookie with this kind of texture and that’s all thanks to the oat fiber.
These easy to make cookies are ready in less than 15 minutes and they’re also:
- vegan
- gluten-free
- oil-free
- sugar-free
- naturally sweetened with dates (more fiber!)
For anyone looking to add more fiber to your diet, these cookies are for you!

Ingredients
1 cup oat fiber
1/2 tsp baking soda
1/4 tsp sea salt
1 cup of warm water + 1 cup of medjool dates, pureed
1/4 tsp pure vanilla extract
1/3 cup unsweetened vegan chocolate chips (you can measure with your heart here)
Instructions
Preheat oven to 350 F. Combine all dry ingredients in a medium bowl, then stir in the date paste and vanilla to form dough. Keep stirring until a soft cookie-dough texture is achieved. Roll into 10 balls. Place on a cookie tray and press down to flatten slightly. Bake for 11 minutes. They will look underdone. Remove from the oven anyway, and let them cool completely on the baking sheet to firm up.
Soft-baked deliciousness! Like I said the oat fiber gives these such a unique texture so you’ll just have to make them to see what I mean. So different than any other cookie I’ve ever made and SO good.
