Decadent, rich dark chocolate swirls top these soft-baked, tart raspberry bars! High in protein and gluten-free, these bars are great for quelling chocolate cravings and will fill your house with the most luxurious smell of cocoa and raspberries.
I goofed, guys.
When I originally planned out my posts for this month, I chose a very specific recipe to share with you on this day. You see, today is National Raspberry TART Day.
Silly me, however, thought it was Raspberry Torte Day! Seems like a simple, no-big-deal mistake, right? Well it turns out tarts and tortes are very different. Let’s gain some dessert knowledge together…
Tarts
A tart is a baked dish consisting of a filling over a pastry base with an open top not covered with pastry. It’s usually filled with some sort of buttercream or fruit.
Tortes
A torte is a rich layered cake made with little to no flour. It uses crumbs, or groundnuts instead. They are filled with fabulous fruit or chocolate fillings and spread with decadent frosting.European tortes are notably less sweet than their American counterparts and when they involve chocolate it’s always DARK.
You see when I created a my new Sugar-Free Dark Chocolate Raspberry Bar recipe, I bit into the finished product and was immediately reminded of an amazing Dark Chocolate Raspberry Torte that I once had at a local bakery.
My family and I went for dessert one time when I was younger and I remember feeling so fancy ordering a slice of torte all to my self. The rich chocolate layers spread with thick raspberry filling topped with all sorts of beautiful designs and shaved chocolate. It was truly a work of edible art, and it TASTED even better! In fact, I think this was my first time falling in love with DARK (and we’re talking very dark!) chocolate.
Now dark chocolate is my favorite and I have a little bit in some form at least once a day! Anyways, back to the bars. When I saw that there was a Raspberry Torte Day (or so I thought) on the calendar for August, I knew it was fate that this recipe had been created!
Of course I planned on sharing it with you all at some point, but with my affinity for participating in foodie holidays, it seemed like perfect timing.
All of this is to say, I’m sorry, this recipe really has no rhyme or reason for today seeing as it’s not National Raspberry Torte Day. But heck! These bars are chocolatey, they’re delicious, and they’ll make you a dark chocolate lover even if you’re the staunchest of milk chocolate eaters.
So Happy National Raspberry Tart Day from me and my chocolate bars! 😉
Sugar-Free Dark Chocolate Raspberry Bars
- Prep Time: 10 mins
- Cook Time: 20 mins
- Total Time: 30 mins
- Yield: 9 bars 1x
- Category: Sweet Snacks
Ingredients
- ½ cup rolled oats (about 44 grams)
- ½ cup chocolate whey protein (about 48 grams)
- 1 tsp baking powder
- 35 grams (1.25 oz or one package) of freeze-dried raspberries
- ½ tsp vanilla bean powder
- ½ tsp cinnamon
- ¼ cup almond milk
- 2 tbsp unsweetened cocoa powder + 2 tbsp water
Instructions
- Preheat oven to 350. Grind oats and raspberries in a food processor. Mix oats with protein powder, baking powder, and cinnamon. Stir in almond milk. Pour into a parchment paper lined 9×9 baking pan and drizzle mixture with chocolate sauce. Bake for 20 minutes. Cool on a wire rack and cut into 9 bars.
Gluten-free, no added sugar, and easy-to-make! These bars make a great, high protein snack when you’re craving something soft-baked, rich, and chocolate filled. The raspberry bar base is complimented so nicely with the chocolate swirls on top. Raspberry and chocolate are a match made in heaven in my opinion! Maybe even better than chocolate and strawberries!?

Thank you!
Kaila, I tried these but they were not really a dough after the milk was added. I ended up adding 5 oz. of applesauce. Also, mine tasted good (I could taste the raspberry) but were chocolate colored. How did you get that lovely pink bar?
Well first off thank you so much for trying them! I’m glad you found a method that worked for you…not sure why a dough didn’t form for ya! Did you use real raspberries or freeze dried ones like the recipe called for? Also, did you mix the chocolate in? It’s only supposed to be drizzled on top. 🙂
