Ingredients Spicy Kale Lentil Burgers:
- 1 cup yellow or red lentils
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp coriander
- ½ tsp dried basil, thyme, oregano
- ¼ tsp cayenne pepper
- ¼ tsp mixed Italian herbs
- 1 large yellow or orange flesh sweet potato, baked, peeled, and mashed
- 2 cups kale, chopped
- ¼ cup whole wheat or gluten-free breadcrumbs
- 1 flax egg (1 tablespoon of flaxseed meal and 3 tablespoons of water, and allow to sit for about 5 minutes)
- Salt and pepper, to taste
Instructions Spicy Kale Lentil Burgers:
- Set your oven to 350°F (175°C).
- Follow the package directions for cooking red lentils. Once cooked, drain and set aside.
- Microwave chopped kale for 1-2 minutes, or until wilted.
- Mix the lentils, mashed sweet potato, kale, garlic, spices, flax egg, and breadcrumbs in a large mixing bowl until well combined.
- Form the mixture into four burger patties.
- Place patties on a parchment-lined baking sheet. Bake for 30 minutes, flipping halfway through.

I love that these use chickpea and chia flour! I have some dried lentils and now I know what to do with them besides make a cute centerpiece with hurricane candle holders.
