After getting in LATE last night…my parents and I still got up super early this morning (think 4 AM!). I guess that’s what the time change will do to ya! But it allowed for some extra time to get and enjoy the day before my college tour.
Breakfast was PITIFUL! We thought the hotel had a complimentary breakfast but that was not the case. Luckily I brought a few things to make up for it…but it was definitely not what I am used to in the morning! I am a BIG breakfast eater.
Speaking a bringing stuff…I always like to come prepared with some staples and snacks when I go on vacation. Nothing too crazy…

So after my sucky breakfast (rolled oats in some luke warm water, rice cakes with pb flour, and TONS of fruit….not satisfying AT ALL)…I headed down to the gym for a work out. It wasn’t even 8 o’clock yet! LOL!
Felt nice to get a sweat sesh in to start the day! I didn’t think I would be able to fit in ANY workouts so this was a welcome surprise!
A little later we headed off to the University of California, San Diego campus for a tour. I am IN LOVE people.
I won’t bore you with all the little details….but seriously, this place got me SO excited! My app is already submitted so hopefully all goes well!
Then the real fun began…
We met my sister for lunch at Whole Foods! (I WAS STARVING at this point!!)

[more beets (they were to die for!!), fresh salsa, roasted cauliflower, sharp cheddar cheese, and tons more yummy salads underneath!]
I didn’t even get a picture of the inside cause I was so focused on stuffing my face….typical But this place was HUGE!
Did a little shopping after lunch of course!
[I cannot find good tortillas like these ANYWHERE in Buffalo…SO I got like three packages each of all of these!!]
I wanted to buy SO much more stuff but sadly I am 2000 miles away from my refrigerator so I had to stick with non perishables.
After our shopping spree we headed back to the hotel and rented some bikes to ride around the harbor a little bit. I even stumbled upon a Trader Joes (Hehe…I am not saying I didn’t know it was there.).
I kept my purchases pretty light!
Woah looking back on this day we really did a lot!!
And we still weren’t done at that point…
When my sister got out of work, we headed to her apartment to start prepping stuff for Turkey Day!

I am making FOUR dishes (we like to have lots of options in my family!) and got two of them out of the way tonight! Baked eggplant and Garlic Great Northern Bean Mash!
Tomorrow I am making roasted veggies and yams! I was originally planning on roasting the two small kabocha’s I bought at Whole Foods today (couldn’t resist ), but I ended up tossing them in the oven while the other stuff was cooking and eating them with dinner. SO good. I can’t believe I got to have my favorite food all the way across the country!
Now we’re all relaxing and watching the pumpkin pie cooking away.
Tomorrow is gonna be great.
