My obsession with skillet cookies continues, friends. Maybe it’s because I now own 3 different cast iron skillets or maybe it’s because skillet cookies are just more fun than regular cookies (plus easier to clean up!), but it doesn’t look like I’ll stop coming up with new varieties anytime soon. 😉
Skillet Cookies Over Regular Cookies
The reason skillet cookies rock? TEXTURE, baby. Soft and light on the inside with the perfect dense, crunchy edges (sort of like an edge brownie piece if you’re into that!).
Let’s talk about my latest skillet cookie love…the Double Chocolate Crunch Skillet Cookie I am sharing today. Not only does it give you a double dose of chocolate (thanks to the cacao powder and the HUGE chocolate chunks), but it’s also super easy to make because it only requires 5 simple ingredients, one bowl, and minimal cleanup. The only thing better than delicious healthy treats? Healthy treats that are easy to make!

With only 5 simple ingredients, this easy to make skillet cookie is:
- grain-free
- gluten-free
- low-carb
- high fiber
- no added sugar
- dairy-free
- oil-free
And not to mention, SUPER easy to make. The perfect way to satisfy your cookie AND cereal cravings at the same time.
Double Chocolate Crunch Skillet Cookie
- Prep Time: 5 minutes
- Cook Time: 30 minutes
- Total Time: 35 minutes

Ingredients
3/4 cup Zensweet Chocolate Chip Cookie Mix
1/4 cup unsweetened cacao powder
1/4 cup liquid egg whites
1/2 cup pumpkin puree
1/2 cup Catalina Crunch Chocolate Peanut Butter Cereal, crumbled
Instructions
Preheat oven to 350 degrees F. Spray a 6.5 inch cast iron skillet with cooking spray and set aside.
In a small bowl, stir together cookie mix, cacao powder, pumpkin, and egg whites. Pour batter into the prepared skillet and spread until evenly distributed. Sprinkle with crushed cereal.
Bake for 30 minutes. Remove from oven and let cool completely before slicing into 8 pieces.
