Whether you call these Hello Dollies, Magic Cookie Bars, Coconut Magic Bars, Layered Cookie Bars, or something entirely different, you need this recipe in your life!
My grandma use to make this type of dessert when I was little and we always called them Hello Dollies! But for the purposes of my Healthy Helper spin on them, we’re going with Magic Cookie Bars. But these aren’t like the traditional Magic Cookie Bars you may be familiar with….my bars are made with ACTUAL COOKIES thanks to the new Grain-Free Cookies from Hu Kitchen!

You guys…if you haven’t tried these new Grain-Free Cookies from Hu Kitchen, you are missing out! They are the first cookies on the market (that I know of!) to be fully date-sweetened. You KNOW I love using dates to make no added sugar treats so seeing a company that I already know and love doing the same is AMAZING. Did I mention the taste and texture are incredible as well!?
These cookies are like mini Chips Ahoy cookies from childhood…but better of course, since they’re made from real, whole food ingredients and NO WEIRD STUFF.
They come in 4 yummy flavors: Chocolate Chip, Peanut Butter, Snickerdoodle, and Ginger Snap. All of which are grain-free, gluten-free, refined sugar-free, and sugar alcohol-free (so hard to find these days!!). All of them (aside from the Peanut Butter) are paleo and KETO-friendly as well.
Of course, I love them on their own, but I had to get a little creative and try them out in a recipe as well. 😉
That’s how these Magic (ACTUAL!) Cookie Bars came to be.
No Weird Ingredients
Just like Hu Kitchen Cookies these bars have NO WEIRD INGREDIENTS. They’re grain-free, gluten-free, dairy-free, refined sugar-free, and simply made with:
- almond flour
- Hu Kitchen Grain-Free Cookies
- Hu Kitchen Salty Dark Chocolate
- coconut milk
- unsweetened flaked coconut
- walnuts
- vegan butter
These Magic Cookie Bars are the ULTIMATE dessert. They have everything you could want in a sweet treat. A soft-baked cookie base topped with crunchy nuts and melty chocolate all enveloped in creamy coconut milk. So many amazing tastes and textures all in one easy to make dessert!
Dairy-Free Grain-Free Magic Cookie Bars
- Prep Time: 10 minutes

Ingredients
1 bag of Hu Kitchen Grain-Free Chocolate Chip Cookies
2 cups almond flour
1/4 cup vegan buttery spread
1/2 cup unsweetened coconut flakes
1 bar of Hu Kitchen Salty Dark Chocolate, roughly chopped
1/2 cup chopped walnuts
1 1/2 cup full fat coconut milk (from a can)
Instructions
Preheat oven to 350 degrees F. Spray an 8×8 baking square generously with cooking spray. In a food processor, pour in cookies and pulse until a fine crumb is achieved. In a medium bowl, whisk together almond flour and cookie crumbs. Next, add buttery spread and using a fork, cut together flour mixture and butter until crumbly dough mixture forms. Press dough mixture into the 8×8 baking sheet so it’s flat and evenly distributed.
Sprinkle the chocolate, coconut, and nuts over top of the cookie base. Now, evenly pour the coconut milk over top. Place in the oven and bake for 32-35 minutes. Remove from the oven and let cool completely before placing in the fridge to set overnight. The fridge is key for these bars to firm up before slicing and serving.
Note: If you let them cool and slice them up the same day, they will be very crumbly. Still delicious but just be aware that they firm up beautifully overnight! I recommend letting them sit in the fridge for AT LEAST 2 hours.
