Ya know what’s lacking on my blog? BLUEBERRY RECIPES.
Going through my recipe page the other day, I noticed how few blueberry recipes I have! I’ve got apples, bananas, peaches, and all sorts of orange recipes featured prominently…but hardly anything is blueberries.
This is surprising because I LOVE blueberries and eat them practically everyday in a smoothie, yogurt bowl, or as a topping for cereal. I like that they’re sweet but not too sweet ya know? I’m also a big fan of blueberry jam as you know from my Instagram.
One thing blueberry filled I haven’t tried yet is pie. But I can only imagine it’s amazing!
How about some quick blueberry facts to celebrate? I always like learning unique things about my favorite foods!
Blueberry Fun Facts
+ blueberries are the only ‘naturally’ blue foods in nature
+ the chemical anthocyanin present in blueberries is good for your eyesight
+ Maine is the #1 producer of blueberries in the whole world
+ there are over 50 varieties of blueberries (I feel like I’ve only had one!)
+ most blueberry flavored foods contain NO REAL blueberries (shocker!)
+ July is National Blueberry Month
+ the pale, powder-like protective coating on the skin of blueberries is called “bloom” I (I always thought it was pesticides! LOL)
While I don’t have a pie recipe to share for you, I do have something blueberry filled that’s just as tasty. Blueberry Cinnamon Granola!
Vegan, gluten-free, and only sweetened with fruit! This granola is healthy, tasty, and has a great texture. It’s also nut-free for anyone who has a nut-allergy or nut-free household.
Slightly crunchy, slightly chewy. The combination of sweet blueberries and zesty, spicy cinnamon is out of this world!
Blueberry Cinnamon Granola
- Prep Time: 10
- Cook Time: 20
- Total Time: 23 mins
- Yield: 6 servings 1x
- Category: Sweet Snacks
Ingredients
1 cup frozen blueberries, thawed and pureed
1/2 cup unsweetened applesauce
1 tsp vanilla extract
1.5 cups rolled oats
1 tsp cinnamon
1 tsp ground ginger
¼ cup buckwheat groats
¼ cup dried blueberries
1/8 tsp sea salt
Optional ingredients:
¼ cup walnuts, chopped (if you’re not nut-free)
2 tsp coconut oil or another neutral oil (for a crunchier granola)
2 tbsp – 1/4 cup shredded coconut
Instructions
Preheat oven to 350. Mix blueberries, vanilla and applesauce (plus coconut oil if using) in blender until smooth. Mix all dry ingredients together in a large bowl. Pour in blueberry mixture and stir until dry ingredients are evenly coated. Place granola mixture on a parchment paper lined baking sheet. Spread out evenly.
Bake for 10 minutes then stir, return to oven to bake for another 10 minutes, stir again, and then continue to bake in 5 minute intervals until desired level of crispness is reached.
This granola is CHEWY vs. crunchy like traditional granola. So be aware of that!
Granola is the best isn’t it? Perfect for snacking on straight off the tray and even better as a topping or with cold, creamy milk! That’s my favorite way to eat it.
So if you can’t find a slice of blueberry pie tomorrow, you can at least dive into a batch of this amazing granola!

Blueberry and ginger have my attention! We use to make our own granola a couple times a month and then things got busy and we had a few we had gotten to use up and feel in love even more with muesli. I really need to get back in the kitchen and find time to make some, I have been telling myself this for months…. pretty sure it won’t happen in the next couple weeks as my husband is gone and I’m trying to just survive but maybe the girls will be up for making some this weekend and we’ll have to make time.
