It only takes 3 simple, every day ingredients to create these lusciously fudgy peanut butter blondies! Dense and delicious, biting into one of these bars will transport you to peanut butter heaven. Vegan, grain-free, and easy to make!
Peanut butter is one of my favorite foods. It’s one thing I could eat EVERY day and never get sick of it. It’s also my go-to answer when I get asked one of those “What food would you take with you on a desert island?” questions. 😉
The recipe is I’m sharing today is one of my favorites and it’s something I shared a few years back. I FINALLY had the chance to update and I’m so happy I did because making it again reminded me of how much I love it.
3-Ingredient Peanut Butter Blondies
These blondies are more than just delicious…they’re also:
- vegan
- gluten-free
- high in protein
- have no added sugar
- grain-free
And SO easy to make!! Check out the recipe below.
3-Ingredient Peanut Butter Blondies
- Prep Time: 5 mins
- Cook Time: 35 mins
- Total Time: 45 mins
- Yield: 9 bars 1x
- Category: Sweet Snacks
Ingredients
1 can of chickpeas, rinsed and drained
1 cup unsweetened applesauce
1 ½ cups peanut flour/powder
Optional: 2 tbsp maple syrup (if you like things sweeter)
Instructions
Preheat oven to 375. Combine apple sauce and chickpeas in a food processor until completely smooth. Add peanut flour and blend until smooth. Spray an 8×8 baking dish with cooking spray. Scoop mixture into baking dish and spread mixture evenly.
Bake for 35 minutes. Let cool completely before slicing and serving.
Totally vegan, completely flourless (gluten-free & grain-free), and super high in plant-based protein. They really are one of the best healthy desserts I’ve ever made.
I love brownies but to me, blondies especially ones that involve peanut butter take the cake. They’re so dense and fudgy.
They’re perfect straight out of the oven or cold after storing them in the fridge. You can top them with a sprinkle of cinnamon, a layer of jam, or my favorite….MORE PEANUT BUTTER.
Seriously, you have no excuse not to make these. 3 ingredients, one bowl, and less than 40 minutes to peanut butter-y heaven right in your own kitchen.

You could totally use PB fit! That would work fine! I used jif peanut butter powder for these!
