Given the fact that I eat multiple bars a day, you’d think that there isn’t a variety out there that I haven’t had. Well you, and I, would be wrong!
Recently, Santa Barbara Bar reached out to me about trying their products. Seeing as I LOVE California and bars, in general, I couldn’t turn them down. Especially after seeing their flavors like:

The bars are gluten-free and naturally sweetened with brown rice syrup. They are like soft-baked granola bars full of big chunks of superfood ingredients. As I said above, my absolute FAVORITE bar was the Peanut Chocolate Cherry! I loved the mix of sweet and salty flavor, the contrast of the tart cherries and rich chocolate, and overall how satisfying it was. I ate one for a snack multiple days in a row…and then I got hit with a little baking inspiration. 🙂
I’ve baked with bars in the past, so I knew I could come up with something worthy of sharing with you all. I ended up with a delicious, nutritious dessert that you can feel good about eating to satisfy your sweet tooth.

- Prep Time: 5 mins
- Cook Time: 20 mins

Ingredients
- 7 Peanut Chocolate Cherry Santa Barbara Bars, unwrapped, one sliced in half length-wise
- ½ cup peanut flour/powder
- heaping ½ cup Delighted By Brownie Batter Dessert Hummus
- ½ cup applesauce
- coconut and dried cherries for topping, optional
Instructions
- Preheat oven to 350. Spray an 8 x 8 baking dish with cooking spray. Place bars next to each other on the bottom of the baking dish (two rows of 3.5 bars). In a bowl combine remaining ingredients until well mixed. Spread the brownie batter mixture on top of the bars. Bake for 20 minutes. Let cool on wire rack before slicing and serving.
Yes, friends. They are as tasty as they sound. Super easy to make too! Gluten-free with only FIVE ingredients. Now that’s my kind of dessert. Plus, they only need to be baked for 20 minutes so you don’t have to have your oven on for long to get a yummy dessert. Perfect for sharing with friends or bringing to your next summer party/potluck!
