Second to chocolate, cinnamon is my FAVORITE flavor for baking. It’s gives me all those warm and cozy feelings of fall…and these soft n’ fluffy Cinnamon Cake Bars will too.

…and they’re topped with keto rainbow sprinkles so that’s just pure FUN.

Sweet Cinnamon Cake Bars
Sweet Cinnamon Cake Bars

Ingredients
2 ripe bananas
1 cup Simple Mills Chestnut Pancake Mix
1/2 cup Pescience Cinnamon Vegan Protein
1/2 cup liquid egg whites
1/4 cup plant milk
1/2 tsp baking powder
Cinnamon, to taste
Instructions
Preheat oven to 350 degrees F. Spray an 8×8 baking square with cooking spray and set aside.
Place all ingredients in a high speed food processor and blend until smooth. Pour batter into the prepared baking dish and spread so it’s evenly distributed. Sprinkle with sprinkles!
Bake for 22-25 minutes until top is firm. Remove from oven. Let cool completely on a wire rack before slicing and serving.
