A fudgy, decadent brownie-like treat in loaf form! This Grain-Free Chocolate Brownie Loaf is gluten-free, dairy-free, no added sugar, and high protein. The ultimate healthy chocolate treat.
When a sweet craving strikes for me, chocolate satisfies it almost 99% of the time. But not just a piece of dark chocolate like most diet and weight loss articles online suggest. (Seriously? Who is satisfied after a square of dark chocolate?!) I want something like a piece of chocolate cake or a brownie! 😉
The thing is though…I’d like to eat chocolate cake and brownies EVERY DAY. So I thought it would be awesome to create an ‘every day’ chocolate treat. Something that TASTES decadent and is super chocolatey, but is made with healthy and wholesome ingredients so you can feel good about enjoying it daily.
So that’s exactly what I did this past weekend! It was definitely one of those kitchen experiments where you throw stuff together and hope it works…but I am happy to report it was an INCREDIBLE success.
One of the best things I’ve made in a while in fact.
Chocolate Brownie Loaf? Chocolate Brownie Cake?
It’s part brownie. Part cake. Part loaf. But it’s all delicious! I’m calling it a Chocolate Brownie Loaf because that’s the shape I baked it into. But the texture is like a fudgy brownie-cake hybrid. So rich. So chocolatey. And yet made with awesome ingredients like…
- chickpeas
- egg whites
- medjool dates
- cocoa powder
- unsweetened applesauce
This treat is gluten-free, grain-free, and no sugar added! It’s also high in protein, low-fat, and high fiber.
But let’s cut the chatting and get to the goods! 😉
Grain-Free Chocolate Brownie Loaf
- Prep Time: 10 minutes
- Cook Time: 50 minutes
- Total Time: 1 hour
- Yield: 1 loaf (8 slices) 1x
Ingredients
1 13.4 ounce container of chickpeas, rinsed and drained (about 238 grams if using a food scale)
1/2 cup liquid egg whites
1/2 cup unsweetened applesauce
1/2 cup unsweetened cashew or almond milk (you can use chocolate if you want!)
12–15 medjool dates, pitted and chopped
1 tsp vanilla extract
1/2 cup unsweetened cocoa powder
1/2 tsp baking powder
1/4 cup Lily’s Stevia-Sweetened Baking Chips (you can use more if you’d like!)
Optional mix-ins: chopped walnuts, slivered almonds, cacao nibs, more chocolate chips
Instructions
Preheat oven to 350. Place all ingredients aside from the chocolate chips in a high powered blender (Vitamix is best!) and blend until smooth.
Spray a loaf pan with cooking spray or line it with parchment paper and scoop in batter. Smooth it out with the back of a spoon or spatula so that it’s evenly distributed. Sprinkle chocolate chips on top. Bake for 50 minutes or until a knife comes out cleanly from the center.
Cool on a wire rack. Let cool COMPLETELY before slicing. Store in the fridge for 4-5 days or freeze.
