Pecan Parmesan Crusted Dijon Tilapia

  • 2 tbsp Dijon mustard
  • 1 tbsp date syrup (code healthyhelper saves!)
  • ½ cup raw pecans, roughly chopped
  • ¼ cup parmesan cheese, grated
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper
  • ¼ tsp ground ginger
  • salt and pepper, to taste
  • 2 to 4 pieces of tilapia

Instructions

1. Preheat the Oven: Preheat your oven to 400°F and line a baking dish with parchment paper for easy cleanup.

2. Make the Honey Dijon Mixture: In a small bowl, combine: Dijon mustard, date syrup, smoked paprika, cayenne pepper, ground ginger, and salt and pepper. Mix until smooth.

3. Prepare the Pecan Parmesan Topping: In another bowl, combine the roughly chopped pecans and grated parmesan cheese. This mixture will create the crunchy crust.

4. Coat the Fish: Lay the tilapia fillets on the parchment-lined baking dish. Lightly coat the top of each fillet with the honey dijon mixture.

5. Add the Crust: Sprinkle the pecan parmesan mixture evenly over the fish, pressing lightly so it sticks.

6. Bake: Bake for about 15 minutes, or until the fish flakes easily with a fork.

7. Broil for Extra Crunch: For the final minute of cooking, move the oven rack to the top position and switch the oven to broil. Broil the fish for 1 minute to crisp and toast the topping. Watch closely so the pecans do not burn.
