You guys. I am officially a marathoner. YES. It happened and I couldn’t be more thrilled. I plan on writing a whole post about all the details of the weekend, but for now I just had to share that big news. I am still on cloud nine from the race and seriously riding that runner’s high all the way home. (While you see this I am still in transit back home from my ‘destination’ race!)
Today’s post does have something to do with my marathon training though so I thought it was appropriate to share after the big race, ya know?
Let’s talk about marathon training for a second. It’s grueling, it takes up a lot of time and will power, and it’s TIRING. I’ve been taking naps almost every afternoon and making sure I am getting a long night of sleep each evening. Another thing? I am sticking to QUICK, EASY meals.
There’s nothing I want to do less than cook a crazy difficult, hard to put together meal when I am dealing with major RUNGER and just need to get fuel in my body ASAP. Throughout my training, and especially as mileage increased, it was important that my meals were efficient and NUTRIENT DENSE.
Believe it or not, a few new recipes actually resulted do to this new approach to food. One of them being the dish that I am sharing with you today!
If you don’t know by now, I am a SEAFOOD LOVER. A seaFOODIE, if you will. 😉 I’ve never had a fish I don’t like and I’ll pretty much eat some sort of seafood everyday if I have the chance.
Pecan Parmesan Crusted Dijon Tilapia
My Pecan Parmesan Crusted Dijon Tilapia was born out of necessity one night when I needed a quick protein-rich and healthy fat-filled meal after a long run (of course I ate it alongside a hefty dose of carbs too!). I was RUNGRY, didn’t feel like waiting a long time for my food, yet wanted something tasty and satisfying.
Pecan Parmesan Crusted Dijon Tilapia
- Prep Time: 10 mins
- Cook Time: 25 mins
- Total Time: 35 mins
- Yield: 2 servings 1x

Ingredients
- 2 tbsp Dijon mustard
- 1 tbsp honey
- ½ cup raw pecans, roughly chopped
- ¼ cup parmesan cheese, grated
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper
- ¼ tsp ground ginger
- salt and pepper, to taste
- 2 Bumble Bee Seafood SuperFresh® Tilapia with Garlic and Extra Virgin Olive Oil
Instructions
- Preheat oven to 400F.
- Combine honey, Dijon, and spices in a small bowl.
- Combine the pecans and cheese in another bowl.
- Line a baking dish with parchment paper.
- Lay the fish fillets on the baking dish and coat the top of the fillets with the honey-mustard mixture lightly.
- Sprinkle the pecan-cheese mixture over the fillets coating them evenly and well.
- Bake until the fillets flake easily with a fork (about 15 minutes).
- In the last minute of baking put the oven to broil and the rack to the very top rung, broil the fish for 1 minute.
