Gluten-Free Mocha Banana Bread

Ingredients

  • 2 scoop of chocolate whey protein powder (28 grams)
  • 4 tablespoons coconut flour
  • 2 tbsp Trader Joe’s coffee flour
  • 1 scoop Nuzest Cocoa Banana Quick Vita Kick
  • 2 very ripe banana (about 200 grams)
  • 1/2 cup unsweetened non-dairy milk
  • 6 tablespoons liquid egg whites
  • ½ teaspoon of cinnamon
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla bean powder

Instructions

  1. Preheat oven to 350. Mash the banana. Whisk together wet and dry ingredients. Stir in mashed banana. Pour into a well-sprayed loaf pan. Bake at 350 F for about 28 minutes. Let the bread cool. Remove from the loaf pan, slice, and serve!
