Things are literally sweet on the blog today because the recipe I have to share today is allllll about natural sweetness. Natural sweetness from ripe ripe ripe bananas to be exact! AKA my favorite kind to bake with.
And what better way to use them than in banana bread! I honestly can’t think of a better use. Well maybe this? Or these? Or maybe some of this? 😉 Okay, so I guess I like using bananas in lots of different things! But there’s nothing more classic than banana bread!
Except this one isn’t so classic. It’s banana bread with a BUZZ as I like to say! Kicked up with cocoa and coffee, it’s like a banana bread energy bar! Imagine pairing this with a cup of coffee!? Talk about jitters! In a good way. 😉
Speaking of coffee, I used COFFEE FLOUR in this recipe. How cool is that!? It’s new from Trader Joe’s and when I saw it I knew I had to pick some up to play with. It’s a must buy, folks. If only to use for this recipe alone, it’s worth the buy.
Now that we’re on the topic of NEW stuff (jeez we’re just jumping all around today!), I want to introduce to you to Cocoa Banana Quick Vita-Kick from Nuzest! As I mentioned in THIS post, they’re one of my favorite vegan protein companies. But now their making greens powder loaded with all sorts of my amazing antioxidants, vitamins, and minerals. Plus the taste? INCREDIBLE. This stuff literally tastes like a chocolate covered banana. Of course, I had to add some to today’s recipe.
Gluten-Free Mocha Banana Bread
- Prep Time: 5 mins
- Cook Time: 28 mins
- Total Time: 33 mins
- Yield: 8 slices 1x
- Category: Sweet Snacks
Ingredients
- 2 scoop of chocolate whey protein powder (28 grams)
- 4 tablespoons coconut flour
- 2 tbsp Trader Joe’s coffee flour
- 1 scoop Nuzest Cocoa Banana Quick Vita Kick
- 2 very ripe banana (about 200 grams)
- 1/2 cup unsweetened non-dairy milk
- 6 tablespoons liquid egg whites
- ½ teaspoon of cinnamon
- 1 teaspoon of baking powder
- 1 teaspoon of vanilla bean powder
Instructions
- Preheat oven to 350. Mash the banana. Whisk together wet and dry ingredients. Stir in mashed banana. Pour into a well-sprayed loaf pan. Bake at 350 F for about 28 minutes. Let the bread cool. Remove from the loaf pan, slice, and serve!
Gluten-free, high protein, and bursting the nutrients from the Quick Vita Kick! This stuff is SO good, guys. Like seriously addicting. And it’s just so easy to make that I can’t help myself from gobbling up a whole loaf in one sitting! The only thing stopping me from baking another one right now is my lack of overripe bananas. Dang, produce department at my local store!
