Ingredients

  • 10 oz purple sweet potato, peeled, cut into cubes, steamed, and mashed
  • ¼ cup gluten-free quick oats
  • ½ cup chunky peanut butter
  • 1 scoop vegan chocolate peanut butter protein powder (43 grams)
  • ¼ cup chopped dried fruit (I used a mixture of cherries and cranberries)
  • ¼ cup vegan chocolate chips, chopped
  • ½ tsp cinnamon

Instructions

  1. Place all ingredients into a large mixing bowl. Use your hands to mix everything together until fully combined. Form 10-12 bites. Place the bites in the refrigerator for at least 15 minutes to set. Store in the fridge.
