STUFFED Vegan Maple Waffle Muffins

79 large medjool dates, sliced and soaked in 1 cup of warm water for at least 20 mins

3/4 cup gf oat flour

1 tsp cinnamon

1 tsp pumpkin pie spice

1 tsp maple extract

2 tsp baking powder

2 Maple No Cow Bars, sliced into thirds

Instructions

Preheat oven to 350 degrees F. In a high spend blender, blend together dates with water until puréed smooth. Add in oat flour, spices, maple extract, and baking powder. Purée until smooth.

Line a muffin pan with 6 aluminum muffin tins and spoon in about 2 tbsp of batter into each one. Press a 1/3 piece of the No Cow Bars into each muffin tin and then fill each one with another 2 tbsp of batter or as much as it takes to cover the bar.

Bake for 20 mins. Remove from oven and let cool completely. To make the waffle top, heat a mini waffle iron until hot and spray with cooking spray. Press each muffin one by one onto the waffle iron and hold for ~30 seconds. Repeat until each muffin is complete. Serve with a drizzle of maple syrup on top or as is!
